1 lb | 500 g boneless skinless chicken thighs, ((or breasts))
Salt and pepper, (to season)
2 tbsp olive oil, (divided)
1 onion, (diced)
4 cloves garlic, (minced (or 1 tablespoon minced garlic))
1/2 cup (125 ml) dry white wine, ((optional))
8 oz (250 g) brown mushrooms, (sliced)
2 cups (500 ml) chicken broth, (or stock)
1 1/2 cups (375 ml) heavy cream, divided ((thickened cream, light cream, evaporated milk can also be used))
Extra salt and pepper, (to taste)
8 oz (250 g) dry pasta, (penne or fettuccini)
1 1/2 cups freshly grated parmesan cheese
Fresh chopped parsley, (to garnish)

Steps:

  • Season chicken thighs with salt and pepper.
  • Heat half of the oil in a large pot over medium-high heat. Add the chicken thighs and sear on both sides until golden brown and cooked through. Remove chicken and set aside.

2 pounds skinless, boneless chicken breasts, cut into chunks
salt and ground black pepper to taste
2 (16 ounce) packages thin spaghetti
4 (15 ounce) jars Alfredo sauce
2 tablespoons Italian seasoning
2 tablespoons garlic powder
2 tablespoons chopped onion
2 tablespoons chopped fresh basil
2 tablespoons salt
2 tablespoons ground black pepper
1 tablespoon onion powder
½ tablespoon cayenne pepper, or to taste
1 ½ cups shredded Parmesan cheese
2 cups chopped broccoli

1/4 cup flour
6 boneless skinless chicken breasts
1/2 teaspoon salt
2 tablespoons olive oil
1 teaspoon olive oil
3 garlic cloves, Minced
1 tablespoon onion, Minced
1 1/2 cups heavy cream
1/3 cup parmesan cheese, Grated
1/2 teaspoon black pepper
1 lb fettuccine, cooked
2 -3 sprigs parsley

Steps:

  • Preheat your oven to 375 degrees.
  • Place the flour in a shallow dish or pie tin.
  • Sprinkle the Chicken with salt then coat with flour.
  • Heat the 2 Tablespoons of Olive Oil in a large skillet over medium-high heat until hot.
  • Add the Chicken and cook--turning once--until golden (2-4 min per side).

  • Bake the chicken until the chicken reaches an internal tempurature of 180 degrees (8-12 minutes).
  • Plate the chicken on a bed of the Fettuccine and sprinkle the Parsley over the top.
