SUPER EASY MEATLOAF

Super Easy Meatloaf image

This is a super easy way to make a meatloaf. I actually made this recipe up from a roast beef recipe that was made by my sister-in-law. She had put Catalina Salad dressing over a roast and baked it, and it was super yummy, so I thought, why not put it in my meatloaf...and so, this is what I created. My husband is not a meatloaf person, but loves this one. I have other friends who have adopted this recipe as well, since it is so simple to make and yummy in the tummy!

Categories     Chicken

Time 55m

Yield 6 serving(s)

Number Of Ingredients 11

300 g ground chicken (extra lean)
1 egg (beaten)
1 (6 ounce) box prepared stuffing (Stove-top chicken flavoured)
1 1/2 cups wild mushrooms (chopped)
1 cup chicken broth (e.g. Campbell's)
1/2 cup onion (chopped)
3/4 cup low-fat cream of mushroom soup (or Campbell's cream of mushroom cooking sauce)
1 tablespoon garlic powder (optional)
1 teaspoon cumin (optional)
1 teaspoon turmeric (optional)
1 pinch black pepper (optional)

Steps:

  • Preheat oven to 350°F.
  • Microwave chicken broth on high for 1 minute.
  • Combine all ingredients EXCEPT cream of mushroom soup/sauce in a large mixing bowl. Mix well.
  • Place mixture into baking dish and bake at 350F for 25 minutes.
  • Remove from oven, spread mushroom soup on top of loaf and bake at 350 for another 10 minutes or until a golden "soup crust" forms.
  • Note: If you prefer to use dried mushrooms, soak the dried mushrooms in the warmed broth before chopping and adding to mixture. Be sure to remove any grit that is released into the broth from the dried mushrooms.

Tips:

  • Choose the right ground meat: A combination of ground beef and ground pork is a classic choice for meatloaf, but you can also use all beef, all pork, or a mixture of other ground meats. Just be sure to adjust the cooking time accordingly.
  • Use fresh, flavorful ingredients: The quality of your ingredients will greatly affect the flavor of your meatloaf. Use fresh herbs and spices, and don't be afraid to experiment with different combinations.
  • Don't overmix the meatloaf: Overmixing will make the meatloaf tough. Just mix the ingredients until they are evenly combined.
  • Form the meatloaf into a loaf shape: Use your hands to form the meatloaf into a loaf shape. Be sure to pack the meatloaf tightly so that it doesn't fall apart during cooking.
  • Cook the meatloaf at a low temperature: Meatloaf should be cooked at a low temperature (350°F) for about 1 hour per pound. This will help to prevent the meatloaf from drying out.
  • Let the meatloaf rest before slicing: Once the meatloaf is cooked, let it rest for 10-15 minutes before slicing. This will help the juices to redistribute and make the meatloaf easier to slice.

Conclusion:

Meatloaf is a classic comfort food that is easy to make and always a crowd-pleaser. With a few simple tips, you can make a delicious, moist, and flavorful meatloaf that your family and friends will love. So next time you're looking for an easy and satisfying meal, give meatloaf a try. You won't be disappointed!
