1 ½ lb ground beef
2 packets taco seasoning
8 oz taco sauce
2 bags nacho cheese doritos
nonstick cooking spray
1 tube crescent dough
16 oz daisy sour cream
1 bag mozzarella cheese
1 bag mild cheddar cheese
topping of your choice, such as lettuce, tomato, and avocado

Steps:

  • First get your oven preheated to 350°F (180°C).
  • Then cook your meat so it's nice and browned. Once it's browned, add your 2 taco seasoning packets and cook it according to the directions on the back. Once that is done add your taco sauce and let the meat continue to cook for about 5 minutes on medium-low heat. Set your meat aside.
  • Smash both bags of Doritos chips to crumbs.
  • Now time to start layering . You'll need a 9 x 13-inch (23 x 33 cm) glass pan or 8 x 12-inch (20 x 30.5 cm). Spray with a generous amount of nonstick spray.
  • Open your tube of crescent rolls and lay them out on the pan and spread it out to cover the bottom of the pan. Then you'll add about ¾ of the bag of smashed Doritos on top of that, spreading it out evenly. Now add the meat and spread it evenly. Add the whole container of sour cream and spread it evenly. Then add your 1 bag of cheddar cheese and right after the bag of mozzarella cheese (use the whole bag). Then top it off with the remaining Doritos (or enough to generously cover the top.

1 cup all purpose flour
½ cup masa harina
2 tablespoons nacho cheese powder, plus more for dusting
½ teaspoon kosher salt
1 teaspoon baking powder
½ cup vegetable shortening, melted
¾ cup water
nonstick cooking spray, for greasing
½ medium yellow onion
3 cloves garlic
olive oil, to taste
1 lb ground beef
2 teaspoons ground cumin
½ teaspoon ground coriander
¼ teaspoon cayenne
1 teaspoon garlic powder
1 tablespoon granulated onion
1 teaspoon paprika
1 teaspoon chili powder
1 teaspoon ground beef bouillon
½ teaspoon msg
¼ teaspoon sugar
kosher salt, to taste
2 cups water, divided
2 tablespoons cornstarch
½ cup sour cream
½ cup iceberg lettuce, shredded
½ cup shredded cheddar cheese
1 tomato, diced

Steps:

  • Make the taco shells: Add the Doritos, flour, masa harina, nacho cheese powder, salt, and baking powder to a food processor. Process until the Doritos are broken down into fine crumbs. With the processor running, slowly pour in the melted lard and water. Continue processing until the dough comes together in a ball.
  • Transfer the dough to a piece of plastic wrap. Shape into a disc, wrap tightly, then refrigerate for 30 minutes.
  • Preheat the oven to 400°F (200°C). Grease 2-3 baking sheets with nonstick spray.
  • Working with one dough ball at a time (keep the rest covered so they don't dry out), place between 2 sheets of parchment paper or plastic wrap. Use a heavy skillet to press down evenly into a thin tortilla.

  • Deglaze the pan with ½ cup of water, stirring to scrape up any browned bits. 12. Continue cooking for about 10 minutes, until the liquid reduces.
  • In a liquid measuring cup or medium bowl, whisk together the cornstarch and remaining 1½ cups water. Add to the beef mixture and bring to a simmer. Cook until the mixture thickens, about 5 minutes.
  • Use an immersion blender to purée about a quarter of the meat in the pan, then stir everything together.
  • To assemble, spoon the meat mixture into the taco shells. Top with sour cream, shredded lettuce, cheese, and diced tomatoes.

2 1/2 cups Copycat Taco Bell Seasoned Beef for taco meat
1 (6 ounce) can cooking spray
1/4 cup buttermilk
3 tablespoons honey
1 tablespoon granulated sugar
1 (4 5/8 ounce) box taco shells
3 (1 ounce) envelopes ranch dressing mix, such as Hidden Valley
3/4 teaspoon fine salt
1/4 teaspoon msg, purchased as Accent flavor enhancer
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
2 cups iceberg lettuce, shreded
2 cups tomatoes, seeded and chopped
1 cup cheddar cheese, shredded
1 cup sour cream

Steps:

  • Make Copycat Taco Bell Seasoned Beef, reserve 2 1/2 cups, set aside.
  • Heat oven to 350°F Place two baking racks over rimmed baking sheets; spray generously with cooking spray. Using aluminum foil, roll 12 1/2- inch balls. In a small bowl, stir together buttermilk, honey, and sugar until well combined.
