A composed salad of baby spinach, sliced Vidalia onions, toasted pecans, fig vinaigrette, and blue cheese croutons.
1 cup dried calymyra figs, stem cut off and quartered
1 1/2 cups champagne vinegar
1/4 cup diced shallots
1 1/2 cups good quality olive oil, plus more for drizzling
Salt and pepper
3 slices thinly sliced white bread, crusts removed, and halved diagonally, making 2 triangles
1/4 pound imported (preferably: fourme d'ambert) blue cheese, or a domestic blue
1/2 Vidalia onion, thinly sliced and divided into rings
1/2 cup pecans, toasted in a 300 degree F oven for 7 minutes
1 large bunch (about 4 cups) baby spinach

Steps:

  • In a small pot over medium heat, rehydrate figs in vinegar for 1/2 hour. Let this mixture cool, then place in food processor, and pulse until figs are in small pieces. In a medium size bowl, whisk figs and shallots and add 1 1/2 cups olive oil, salt, and pepper.
  • Preheat oven to 325 degrees F.
  • Sprinkle the triangular toasts with oil, and season with salt and pepper. Toast the croutons in the oven. Crumble some of the blue cheese on top of each crouton. Melt the blue cheese on the toast points underneath the broiler.
  • While cheese is melting, toss the baby spinach in the fig vinaigrette. Divide the spinach onto 2 plates, add 1/2 the onion slices and 1/2 the toasted pecans. Place 3 hot croutons on each plate.

2 lemons, thinly sliced
2 cups water
2 tablespoons sugar
1 teaspoon salt
2 cloves garlic, roasted, peeled and chopped
1/4 pound pancetta, cut into small dice
4 cups steamed spinach
1 teaspoon fresh ground pepper

Steps:

  • Combine the sliced lemons, water, sugar and salt in a saucepan. Simmer until the lemons are tender, about 20 minutes. Put the lemons, their liquid and garlic in a blender or food processor. Puree until smooth. Transfer to a large glass or ceramic bowl. Set aside.
  • Render the pancetta in a cast-iron skillet over medium heat until golden brown. Using a slotted spoon, take the pancetta out of the pan and drain on paper towels. Pour out all but 1 tablespoon of the fat. Add the spinach to the skillet. Saute over high heat until the spinach is warmed, about 5 minutes. Add the spinach to the lemon sauce and toss. Season with pepper.

2 cups radicchio
1/2 cup jicama, cut into thin strips
1/2 cup sweet red pepper, cut into thin strips
1/2 cup sweet yellow pepper, cut into thin strips
1/2 cup carrots, peeled and cut into thin strips
1 tablespoon sun-dried tomato, cut into thin strips
2 tablespoons honey
1 scallion, minced
2 oyster mushrooms or 2 large white mushrooms, minced
2 cloves garlic, minced
1/2 teaspoon Serrano chilies or other fresh chili peppers
1/4 teaspoon Dijon mustard
2 teaspoons rice vinegar, with more to taste
1/2 teaspoon cracked black peppercorns, with more to taste

Steps:

  • To make the salad, tear the spinach and radicchio into large pieces. Toss with the jicama, peppers, carrots and sun-dried tomato.

3/4 lb bacon
2 tablespoons bacon drippings
1/4 cup red wine vinegar
3 tablespoons tarragon vinegar
2 garlic cloves, peeled and crushed
2/3 cup olive oil or 2/3 cup salad oil
1 teaspoon Worcestershire sauce
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Wash spinach, removed stems, break into bite-sized pieces and chill until crisp.
  • Dressing: Combine bacon drippings, vinegars, garlic, oil, Worcestershire sauce, salt and pepper.
  • Place crisp spinach leaves in a large salad bowl, salt and pepper to taste, add crumbled bacon and just enough dressing to coat each leaf lightly. Store remaining dressing the in the refrigerator.
  • Toss and serve at once.

1/2 onion, cut into 1-inch chunks
1/4 cup firmly packed brown sugar
1/4 cup red wine vinegar
2 tablespoons catsup
1 teaspoon Worcestershire sauce
1 teaspoon dry mustard
4 bacon slices
1 spinach bunch, washed, trimmed, torn into bite-size pieces
1 1/2 cups bean sprouts
6 mushrooms, sliced
4 green onions, sliced
1/2 cup sliced canned water chestnuts
2 hard-boiled eggs, chopped
1/4 cup dry-roasted sunflower seeds

Steps:

  • Puree first 7 ingredients in blender or processor until smooth and emulsified. Set dressing aside.

2 teaspoons finely chopped green peppers
2 teaspoons minced fresh parsley
1/2 cup canola oil
1/4 cup apple cider vinegar
