Remove from the heat and stir in the sour cream and 1 1/2 cups of the Cheddar. Add the hash browns and toss until coated in the sauce. Add salt and pepper to taste.
  • Transfer the hash brown mixture to the prepared baking dish, then top with the remaining 1/2 cup Cheddar. Bake until browned and bubbling at the edges, about 45 minutes. Tips:

  • For the best results, use fresh, high-quality potatoes. Russet potatoes are a good choice for this recipe.
  • To save time, you can use pre-shredded potatoes. However, freshly shredded potatoes will give you a better texture.
  • If you don't have a food processor, you can grate the potatoes by hand. Just be sure to grate them finely.
  • Be sure to wring out the excess moisture from the potatoes before adding them to the casserole. This will help prevent the casserole from being too watery.
  • Feel free to add other ingredients to the casserole, such as cooked bacon, sausage, diced vegetables, or cheese.
  • Cover the casserole with foil before baking. This will help to keep the potatoes moist.
  • Bake the casserole for 45-50 minutes, or until the potatoes are tender and the casserole is bubbly.
