Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease and flour one 9 x 13 inch cake pan.

1/2 cup dark brown sugar
1/4 cup applesauce
2 eggs
1 cup all-purpose flour
3/4 cup ground almond meal
1 tablespoon baking powder
1 teaspoon cinnamon

1/4 teaspoon ginger
2 large golden delicious apples, sliced
1/4 cup honey
1 tablespoon melted organic butter, for greasing
3/4 cup frozen blueberries

Steps:

  • Preheat oven to 400 degrees.
  • Arrange sliced apples on a baking sheet and drizzle honey over them. Bake at 400 degrees for 10-15 minutes until apples are moist and tender.

CAKE:
18 .5 oz banana cake mix
MIDDLE:
20 oz can crushed pineapple with juice
3/4 c granulated sugar
2 Tbsp rum extract
2 pkg 3 oz. size each instant banana pudding
3 c cold milk
2 medium bananas, not too ripe but not green either
TOPPING:
8 oz thawed whipped topping
1/4 c powdered sugar
1 tsp vanilla
3/4 c chopped nuts
1/2 c flaked coconut, or slices of banana, optional

Steps:

  • 1. CAKE: Make and bake cake according to package directions in a 9x13-inch pan sprayed and line with parchment paper and spray it.Poke holes all over cake with a chop stick and fork tines as soon as it comes out of the oven. Set aside to cool.
  • 2. MIDDLE: Place pineapple with juice in a medium saucepan and add sugar. Heat over medium heat for 10 minutes, until sugar is dissolved, remove from heat. Mix in the rum then pour evenly over the whole cake. Let cool to room temperature.
