This recipe came from my sister in law she used to make it every Christmas. This dish can be prepared thru step 2 up to one month ahead of time and frozen; or up to four days ahead and refrigerated. Thaw if frozen, spoon into baking dish,sprinkle with cheese and bake in a 350 degree oven 40 minutes or until hot.

5 pound(s) sweet potatoes, cubed
2 tablespoon(s) butter or margarine, cut in small pieces
3/4 cup(s) apple cider or juice
1/2 teaspoon(s) salt and pepper
1 cup(s) part-skim gruyere cheese, shredded
- chopped parsely

Steps:

  • Heat oven to 375 degrees. Bake potatoes in a jelly roll-pan 1 to 1-1/4 hours, until soft when pierced. When cool enough to handle; remove skin.

1/2 cup granulated sugar
1/4 cup sweetened condensed milk
3 tablespoons butter, melted
1/2 teaspoon salt
1 teaspoon vanilla extract
2 large eggs
Cooking spray
Topping:
1/3 cup of all-purpose flour
2/3 cup packed brown sugar
1/8 teaspoon salt
2 tablespoons melted butter
1/2 cup chopped pecans

Steps:

  • Preheat oven to 350°.
  • Place a pot of water on the stove and bring the water to a boil.
  • Peel and chop the potatoes into 1 inch cubes. Once the water is boiling put your potatoes in for 10 to 15 minutes or until the potatoes are soft.

I took this recipe from lots of different recipes to finally end up with the one that my husband, Brian liked the best! Ergo the name...Brian's Sweet Potato Casserole. This is great with Ham or Turkey. Will serve 4 generously or 6 if you plan a few different side dishes. I microwave the Large to Medium sweet potato's on high for approximately 8 minutes each. (poke holes in them with a fork and cover with paper towels prior to putting them in the microwave). Then I run the potato's under cold water. Wait till they are a bit cooler and then peel and chop into chunks. Be careful not to burn you fingers!!
