Guacamole is always a party favorite, even when it looks like it was dredged from the swamp! I add white beans to resemble pebbles. Serve with blue corn tortilla "witch hats."

3 medium ripe avocados, peeled
1 can (15 ounces) cannellini beans, rinsed and drained
1/4 cup finely chopped onion
1/4 cup minced fresh cilantro
2 tablespoons lime juice
1/8 teaspoon salt
Tortilla chips

Steps:

  • In a small bowl, mash avocado with a fork. Stir in the beans, onion, cilantro, lime juice and salt. Serve with chips.

3 slices bacon
2 heads freshly cut swamp cabbage (hearts of palm), chopped
1/2 cup sugar
1 tablespoon salt
1/2 tablespoon freshly ground black pepper

Steps:

  • In a medium saucepan, fry the bacon over medium heat. Set aside, reserving drippings. Put swamp cabbage and remaining ingredients, including fried bacon and bacon drippings, in a 6-quart pot. Fill the pot 1/2 full with water and bring to a boil. Continue to boil for 10 to 15 minutes, until the cabbage is tender. Adjust salt and pepper, to taste. Serve hot as a side dish.
