When fresh tomatoes from my garden start ripening faster than I can eat them fresh, I make this salsa. I modified the recipe to match my taste for sweet salsa with just a bit of zip. I freeze peeled tomatoes so that I can have the garden-fresh taste in winter, too.

SALSA ROJA

Salsa Roja image

Most of the flavor in my homemade salsa roja recipe comes from dried mild chiles, like ancho, guajillo, and pasilla. Use this mild salsa on tacos or chips.

Provided by Jarrett Melendez

MILD SWEET SALSA

Mild Sweet Salsa image

I always like blazing salsas. That's just me. But when it comes to my daughter, or my family and guests, I need to have something for those who don't like pure fire. This is one of the salsas I use then. One thing I like about this one, is that the flavoring is a bit fresher and not as typical of the mild salsas that taste like diced tomatoes. I think the basil is the secret weapon- it has a little bite, but it is cool to the taste. Whatever it is, everyone seems to like it!

Tips:

  • Select ripe and flavorful tomatoes: The quality of your salsa depends on the quality of your tomatoes. Choose ripe, juicy tomatoes with a deep red color and a sweet flavor.
  • Use a variety of tomatoes: Don't be afraid to mix and match different varieties of tomatoes to create a more complex flavor. For example, you could use a combination of Roma tomatoes, cherry tomatoes, and heirloom tomatoes.
  • Roast or grill your tomatoes: Roasting or grilling your tomatoes will bring out their natural sweetness and flavor. This is a great way to add a smoky flavor to your salsa.
  • Use fresh herbs and spices: Fresh herbs and spices can add a lot of flavor to your salsa. Some popular choices include cilantro, basil, oregano, cumin, and garlic.
  • Add some heat: If you like spicy salsa, you can add some heat by using chili peppers or cayenne pepper. Start with a small amount and add more to taste.
  • Let your salsa rest: After you've made your salsa, let it rest for at least 30 minutes before serving. This will allow the flavors to meld together.
