SWEET AND SOUR SEITAN

This is a tasty vegetarian version of a Chinese classic. You won't even be able to tell it isn't chicken! Seitan is made from wheat gluten and is very high in protein and low in fat. I recommend using a chicken-style variety.

WW SWEET AND SOUR SEITAN

Categories     Soy     Stir-Fry     Vegetarian

Yield 4 Servings

Number Of Ingredients 10

1 Tbsp canola oil
1 large onion(s), sweet, cut into 1/4-inch half moons
1 large sweet red pepper(s), cut into 1-inch pieces
16 oz seitan slices, rinsed and patted dry, cut into 1 1/2-inch pieces
1 cup canned unsweetened pineapple chunks, in juice (undrained)
1 Tbsp low-sodium soy sauce
2 tsp apple cider vinegar
4 tsp arrowroot
2 Tbsp water
2 medium scallion(s), sliced diagonally (for garnish)

Steps:

  • Place oil in a large nonstick skillet over medium-high heat. Add onion and red pepper; cook until vegetables start to brown, about 3 to 5 minutes. Add seitan and cook for 2 minutes more. Add pineapple and 1/2 cup of its juice, soy sauce and vinegar; stir to combine and cook 2 minutes more. Mix arrowroot with 2 tablespoons of water in a cup; stir to combine and add to skillet. Increase heat to high so mixture boils; cook until sauce has thickened, about 3 minutes. Garnish with scallion and serve. Yields about 1 1/2 cups per serving.

Tips:

  • Mise en Place: Before you begin cooking, make sure you have all of your ingredients and equipment ready. This will help you stay organized and avoid scrambling during the cooking process.
  • Use a Sharp Knife: A sharp knife will make it easier to cut the seitan and vegetables. This will help you achieve even cooking and a more attractive presentation.
  • Marinate the Seitan: Marinating the seitan in a flavorful mixture adds moisture and depth of flavor. You can use a simple marinade made with soy sauce, rice vinegar, and garlic, or get creative with your own blend of spices and herbs.
  • Coat the Seitan in Cornstarch: Coating the seitan in cornstarch before frying helps to create a crispy crust. Make sure to shake off any excess cornstarch before frying.
  • Fry the Seitan in Hot Oil: Frying the seitan in hot oil helps to create a crispy crust and prevents the seitan from becoming soggy. Make sure the oil is hot enough before adding the seitan, or it will absorb too much oil.
  • Use a Wok or Large Skillet: A wok or large skillet will give you plenty of space to stir-fry the seitan and vegetables without overcrowding the pan. This will help you achieve even cooking and prevent the ingredients from steaming instead of frying.
  • Cook the Vegetables Over High Heat: Stir-frying the vegetables over high heat helps to preserve their crisp-tender texture. Make sure to stir the vegetables constantly to prevent them from burning.
  • Add the Sauce at the End: Adding the sauce at the end of the cooking process helps to prevent it from burning. Stir the sauce in gently to evenly coat the seitan and vegetables.

Conclusion:

This sweet and sour seitan recipe is a delicious and easy-to-make dish that is perfect for a quick weeknight meal. The seitan is crispy on the outside and tender on the inside, and the sweet and sour sauce is flavorful and tangy. Serve this dish over rice or noodles for a complete meal.
