Yield Makes 1 loaf

Number Of Ingredients 8

1 cup sugar
2 large eggs
3 tablespoons unsalted butter, room temperature
1 cup milk
1 1/2 cups all purpose flour
2 teaspoons baking powder
1 teaspoon ground cinnamon
1 teaspoon salt

Steps:

  • Preheat oven to 350°F. Butter and flour 9x5-inch loaf pan. Using electric mixer, beat sugar, eggs and butter in large bowl until well blended. Beat in milk. Mix flour, baking powder, cinnamon and salt in medium bowl. Add to butter mixture and beat just until blended.
  • Pour batter into prepared pan. Bake until golden brown and tester inserted into center of bread comes out clean, about 1 hour. Transfer pan to rack and cool 10 minutes. Using small knife, cut around sides of pan to loosen bread. Turn bread out onto rack and cool completely. (Can be made 1 day ahead. Wrap in foil and store at room temperature.)

2 1/2 cups flour
1 1/2 cups packed light brown sugar
1 tbsp. shredded orange peel
1/2 t. salt
1/2 t. ground mace
1/2 cup butter or margarine
2 t. baking powder
1/2 t. baking soda
1 egg, beaten
3/4 cup buttermilk
1/2 t. ground cinnamon
1/3 cup chopped walnuts

Steps:

  • 1. Combine flour, brown sugar, orange peel, salt and mace in a mixing bowl; cut in butter until mixture resembles coarse crumbs. Measure 1/3 cup and set it aside.
  • 2. Add baking powder and soda to remaining crumbs. Combine egg and buttermilk; add to flour mixture, stirring until well mixed. Turn into a greased 9" square baking pan. Add cinnamon and walnuts to reserved crumbs; sprinkle evenly over batter.
  • 3. Bake in a 400 oven for 45 to 55 minutes or until a wooden pick inserted in center comes out clean. Makes 9 to 12 servings
