Tips:

1. **Selecting Pork Chops:** Choose 1-inch-thick pork chops to ensure even cooking and prevent over-drying. 2. **Marinating Pork Chops:** Marinate the pork chops in a mixture of soy sauce, Dijon mustard, olive oil, and seasonings to enhance their flavor. Marinate for at least 30 minutes, but longer marinating times will result in more intense flavors. 3. **Preparing Sweet Cherry Sauce:** Use fresh sweet cherries for the sauce to achieve the best flavor. Pit and halve the cherries before cooking them in a saucepan with sugar, red wine vinegar, and a touch of cornstarch for thickening. Adjust the sweetness and tanginess of the sauce to your preference. 4. **Cooking Pork Chops:** Sear the pork chops in a skillet over medium-high heat to create a browned crust. Reduce the heat to medium-low, cover the skillet, and cook the pork chops for 8-10 minutes per side, or until they reach an internal temperature of 145°F. 5. **Adding Sweet Cherry Sauce:** Once the pork chops are cooked, add the prepared sweet cherry sauce to the skillet and bring it to a simmer. Gently stir the pork chops in the sauce to coat them evenly. 6. **Serving Suggestions:** Serve the sweet cherry pork chops with roasted vegetables, mashed potatoes, or a fresh salad for a complete and balanced meal.
