1 cup water
1 cup rice vinegar
1 cup sugar
2 teaspoons fresh ginger root, minced
1 teaspoon garlic, minced
2 teaspoons hot chile pepper, minced
2 teaspoons ketchup
2 teaspoons cornstarch

Steps:

  • Pour water and vinegar into a saucepan, and bring to a boil over high heat. Stir in sugar, ginger, garlic, chile pepper, and ketchup; simmer for 5 minutes. Stir in cornstarch. Remove saucepan from stove to cool. Then transfer to a bowl, cover, and refrigerate until needed.

This is one of my grandmother's recipes which has been passed on. Delicious accompaniment for baked or grilled meat or as a base for a barbecue sauce.

6 quarts tomatoes, peeled and cut
4 cups vinegar
1 tablespoon clove
1 tablespoon allspice
1 tablespoon salt
1 teaspoon dry mustard
3 lbs brown sugar
4 tablespoons cornstarch

Steps:

  • Peel and chop tomatoes and add to a large pot. Add 4 cups vinegar and let stand for 2-3 hours. Boil 10 minutes, then add cloves, allspice, salt, and dry mustard. Boil one hour then add 3 lbs. brown sugar. Boil 1 hour, then add cornstarch and boil for 1/2 hour more.
  • Jar and seal.

1/2 cup Salted butter - divided
1 clove garlic clove - crushed
1/4 cup Yellow onion - minced
1/2 cup Sweet Chili Sauce
2 teaspoons Soy Sauce

  • In saucepan over medium heat, melt 1 T. butter. Add crushed garlic and onion and saute until golden brown. Add remaining butter and whisk to melt. Reduce heat to low. Slowly whisk in sweet chili sauce and soy sauce. Sauce will thicken the longer it is left on heat.

20 red chillies , stems removed, deseeded for a milder sauce
1 finger sized piece of ginger , peeled and roughly chopped
5 garlic cloves , roughly chopped
100ml white wine or cider vinegar
200g white caster sugar

Steps:

  • Tip all the ingredients except the sugar into a mini chopper or blender and blend to a chunky sauce. Scrape the contents into a shallow saucepan with the sugar and 100ml water and bring to a simmer.
  • Simmer for 15 mins, stirring occasionally until it becomes syrupy. Keeping a close eye on it, continue to simmer and stir for 5 mins more until it easily coats the back of the spoon and you see the bottom of the pan when you stir. Leave to cool and infuse for 1-2 hours. Will keep in a small sterilised jar for up to a month.

Similar to a chili sauce my mom and grandma used to make; we always had it chilled over cream cheese to spread on crakcers. This recipe was adapted from one by a bridge pal, Robert King. He was gracious enough to share it from his southern grandmother's recipe file. The traditional way to enjoy this sauce down south is spooned over black-eyed peas. If you are a tomato gardener and find yourself with an overabundance; substitute 4 quarts of peeled and chopped fresh tomatoes for the canned.

2 (28 ounce) cans diced tomatoes, with juice
2 cups chopped white onions, 1 large
2 cups chopped red bell peppers or 2 cups green bell peppers, 1 large
1 cup diced celery, 2 stalks
2 -3 hot chili peppers, minced
1 cup sugar
1 tablespoon kosher salt
1 1/2 cups cider vinegar
4 tablespoons pickling spices
4 teaspoons mustard seeds

Steps:

  • Combine tomatoes with next 7 ingedients in a large sauce pot. Tie pickling spices and mustard seed in a cheesecloth bag and add to pot. Bring to a boil over medium high heat, stirring to prevent scorching. Reduce heat and simmer, uncovered, for 1 1/2 to 2 hours until mixture thickens and becomes slightly syrupy. Stir frequently to prevent mixture from sticking to bottom of pot.
  • When sauce reaches desired thickness, discard spice bag and ladle hot sauce into 1-pint jars, leaving 1/2-inch headspace. Process jars according to directions or let cool completely and refrigerate for up to 3 months.
