3 ears of corn (kernels removed (reserve one cob))
3 Tbsp olive oil (divided)
4 cups chicken broth (or vegetable broth)
2 cups water
1/2 tsp saffron threads
1 Tbsp butter
1/2 medium onion (finely chopped)
1 large shallot (minced)
1 cup arborio rice
1/2 cup dry white wine
1/3 cup grated Parmigiano-Regiano cheese
3-4 oz marscapone cheese
2 Tbsp fresh thyme leaves
salt and fresh cracked pepper

Steps:

  • Set the oven to 450F
  • Put the corn kernels on a baking sheet and toss with 2 Tbsp of olive oil and a little salt and pepper. Roast for 5 to 7 minutes, and then put the pan under the broiler for about 2 minutes, watching carefully, until they get just slightly charred. Set the corn aside. You want about a heaping cup of roasted kernels for the risotto.
  • Heat the stock and 2 cups of water to just under a simmer in a small saucepan. Break the reserved corn cob in two, and add it as well. Add the saffron threads, crushing them between your fingers as you add them to the stock. Season the stock with 1/2 tsp of salt.
  • Heat the final Tbsp of olive oil and the butter in a heavy bottomed stock pot. Add the onion and the shallot and saute until they are softened and translucent.
  • Add the rice and stir to coat, for another minute.
  • Add the wine to the pot and stir while it is absorbed, another minute and a half or so.
  • Start adding the stock to the rice, a ladle at a time, stirring almost constantly, and letting each addition of stock get fully absorbed before the next addition. The pot should be kept at a gentle simmer at all times.
  • After 2 or 3 ladles of stock have been absorbed, add in 1/2 cup of the corn. Keep stirring and adding stock, making sure your pot is simmering and the rice isn't sticking to the bottom of the pan, especially toward the end of the cooking. The whole process is going to take about 30 minutes.
  • After about 25 minutes, taste the rice to see if it is tender. You may not use the whole amount of stock. When the rice is tender, add in the rest of the corn, the cheeses, and the fresh thyme. Season with lots of fresh cracked black pepper. Mix everything in well, and then taste again to check the seasonings. Add a little more stock if the risotto seems dry.
  • Serve immediately with more Parmesan cheese on the side.

2 tablespoons olive oil (divided)
6 tablespoons cold unsalted butter (divided)
1/3 cup heavy cream
6 cups chicken or vegetable broth
2 shallots (minced)
1 1/2 cups arborio rice
Salt and freshly ground white pepper (to taste)
1/2 cup dry white wine
1/2 cup freshly grated parmesan cheese (preferably Parmigiano-Reggiano) (plus more for serving)
Fresh basil (for garnishing)

Steps:

  • Cut the corn kernels off the cobs (see notes). In a heavy-bottomed high-sided skillet, over medium heat, heat 1 tablespoon of olive oil and 2 tablespoons of butter. Add the corn kernels and sauté until tender, about 2 minutes.
  • Remove from the heat and transfer 1/3 of the cooked corn to the jar of a blender. Reserve the remaining corn in a bowl.
  • Pour the heavy cream in the blender with the corn. Blend until smooth. Reserve.
  • In a medium sauce pan, heat the broth over medium high heat, until simmering. Lower the heat to the lowest setting to keep the broth warm while you cook the risotto.
  • Place the skillet back on the stove, over medium heat. Add the remaining tablespoon of olive oil and 2 tablespoons of butter. Once the butter has melted, add the minced shallots and sauté until softened, about 1-2 minutes.
  • Add the arborio rice and stir to coat in the fat. Cook for about a minute, or until the rice is toasty and releasing a nutty aroma but not browned. Season with a pinch of salt and white pepper. Pour in the white wine and cook until fully absorbed, about 1 minute.
  • Add a ladleful of broth to the rice, stirring occasionally so the rice doesn't stick to the pan, but not too often or it will cool and not cook evenly. Once the liquid is absorbed, add the next ladleful, repeating this process until the rice is cooked through but al dente, about 17-20 minutes.
  • Remove the pan from the heat. Add the remaining butter and parmesan cheese, stirring vigorously to melt the butter and emulsify it into the risotto.
  • Gently stir in the reserved creamed corn and corn kernels. Taste and adjust seasoning.
  • Garnish with fresh basil and serve warm!

2 tablespoons butter
1 cup chopped yellow onions
2 ears of sweet corn, scrapped from the cob
1/2 teaspoon salt
1/4 teaspoon white pepper

1 pound risotto
6 cups vegetable stock
1 pound black trumpet mushrooms
2 teaspoons chopped garlic
1/4 cup heavy cream
1/2 cup grated Parmigiano-Reggiano cheese

Steps:

  • Over medium heat, in a large saute pan, heat the olive oil and 1 tablespoon butter. Heat the oil for 1 minute. Add the onions, corn, salt, white pepper, and black pepper. Saute for 3 minutes. Using a wooden spoon, stir in the risotto. Saute for 2 minutes. Stir the stock into the risotto. Bring the liquid up to a simmer, about 6 minutes. Stir in the mushrooms and garlic. 6 ears fresh corn, kernels removed (about 5 cups kernels), cobs discarded
2 tablespoons flaky sea salt, plus more to taste
6 tablespoons extra-virgin olive oil
2 cups fresh ricotta
1/2 cup heavy cream
2 tablespoons crème fraîche or sour cream
1 1/2 cups grated Parmesan
4 large eggs, whites and yolks separated
Coarsely ground black pepper
1/3 packed cup fresh basil leaves (about 20 leaves)
2 tablespoons fresh lemon juice (from 1/2 lemon)

Steps:

  • In a large skillet, melt 2 tablespoons butter over medium heat. Add the corn kernels and 1 tablespoon salt and cook, stirring occasionally, until corn is just beginning to soften, about 5 minutes. Transfer half the kernels to a food processor and purée with 2 tablespoons olive oil. Transfer the corn kernels and puréed corn to a large bowl and let cool, about 30 minutes.
  • Heat the oven to 450 degrees. When the corn mixture has cooled, add the ricotta, heavy cream, crème fraîche, 1 cup Parmesan and the remaining 1 tablespoon salt; season to taste with more salt, if desired.
  • In a stand mixer fitted with the whisk attachment, whip the egg whites to stiff peaks on high speed, 1 to 2 minutes. Stir the yolks into the ricotta mixture until combined then gently fold in the whites, working delicately to avoid deflating.
  • Rub the sides and crannies of a 6-by-10-inch oval or 8-by-8-inch square (or similar 2-inch-deep) baking dish with a knob of butter. Add 3 tablespoons grated Parmesan, knocking it around the baking dish to coat the entire thing, then follow with a few grinds of pepper.
  • Pour the ricotta batter into the dish. Top with another 3 tablespoons Parmesan. Bake until the cheese has browned and the sformata has set in the center, 35 to 40 minutes.
  • Using a mortar and pestle, grind the basil with the lemon juice and a pinch of salt, then stir in the remaining 1/4 cup oil.
  • Just before serving, top the warm sformata with the remaining 2 tablespoons grated Parmesan, drizzle with basil oil and serve.

My mom made this risotto for us fairly frequently as we loved it so much. I got this recipe from "Italian Cooking" by Capalbo et al. I was forced to find an actual recipe since my mom doesn't have her recipes on paper (you know how it is :)) and this one comes very close. Yes, it's a bit time consuming and requires a lot of stirring, but you will be well-rewarded in the end for your effort! :D In Italy, this risotto is classically served with osso bucco, but it's wonderful even on its own!

5 cups beef stock or 5 cups chicken stock
1 pinch saffron (1 sachet)
6 tablespoons butter
1 onion, finely chopped
1 1/2 cups arborio rice (if you can find it, carnaroli makes the *best* risotto)
1 cup grated parmesan cheese (not the stuff from the can!)
salt and pepper, to taste

Steps:

  • Bring the stock to a boil, then reduce to a low simmer.
  • Ladle a little stock into a small bowl.
  • Add the saffron threads or powder and leave to infuse.
  • Melt 4 tbsp of the butter in a large saucepan until foaming.
  • Add the onion and cook gently for about 3 minutes, stirring frequently, until softened.
  • Add the rice.
  • Stir until grains start to swell and burst, then add a few ladlefuls of the stock, with the saffron liquid, and salt and pepper to taste.
  • Stir over low heat until the stock is absorbed.
  • Add the remaining stock, a few ladlefuls at a time, allowing the rice to absorb all of the liquid before adding more, and stirring constantly.
  • After 20-25 minutes, the rice should be al dente and the risotto golden yellow, moist and creamy.
  • Gently stir in about two-thirds of the parmesan and the rest of the butter.
  • Heat through until the butter has melted, then taste for seasoning.
  • Transfer the risotto to a warmed serving bowl or platter and serve immediately, with the remaining parmesan sprinkled on top.

The farro simmers in a quick homemade corn stock that makes use of the leftover corn cobs and imparts a rich corn flavor. Finally, fresh tarragon gives this risotto a lot of personality, but basil would be a fresh substitute.

3 ears fresh corn, husks and silk removed
Kosher salt and black pepper
2 tablespoons extra-virgin olive oil
2 tablespoons unsalted butter
2 cups thinly sliced leeks, white and light green parts (1 to 2 leeks)
1 1/2 cups pearled farro (see Tip)
1/2 cup dry white wine
1 cup cherry tomatoes (about 6 ounces), halved
3/4 cup freshly grated Parmesan (about 2 ounces)
2 teaspoons chopped fresh tarragon or basil
1 teaspoon lemon zest

Steps:

  • Using a sharp knife, cut the corn kernels off the cob, cutting as close to the cob as possible. Set the kernels aside and reserve the cobs.
  • Make the corn stock: Holding the cobs over a medium saucepan, use a spoon to scrape down the sides of the cobs to release any additional corn and juices. Break the cobs in half and add to the saucepan, along with 8 cups water and 1 teaspoon salt. Bring to a boil, lower the heat, and simmer for 15 minutes before starting the risotto. (Keep the stock and corn cobs simmering while you cook the risotto.)
  • While the corn stock simmers, heat the oil and butter in a separate pot or Dutch oven over medium-low heat. Add the leeks and sauté until tender, 5 to 7 minutes. Add the farro and stir for 1 minute. Add the white wine and simmer until most of the liquid has evaporated.
  • Increase the heat to medium and gradually add the corn stock, about 1 cup at a time, to the farro mixture. Cook, stirring occasionally, and adding more stock as the farro absorbs it.
  • When the risotto has been cooking for 15 minutes, add the tomatoes, corn kernels, 1 teaspoon salt and 1/2 teaspoon pepper. Continue cooking, adding stock as necessary and stirring often, until the farro is tender, 10 to 15 more minutes. (You will use most - if not all - of the corn stock.) The risotto is done when the farro grains are tender and most of the liquid has been absorbed.
  • Off the heat, stir in the Parmesan, tarragon and lemon zest. Season to taste with salt and pepper and serve immediately.

1 cup white wine
Large pinch of saffron

Steps:

  • Bring stock to a low simmer in a medium pot. Heat oil in a medium saucepan over medium heat for 1 minute. Cook onion until translucent, about 3 minutes. Add rice and a pinch of salt. Sauté until rice is translucent, 1 to 2 minutes. Add wine and saffron; bring to a simmer, stirring, until rice has absorbed most of wine. Add 2 ladles of stock to rice; simmer, stirring, until rice has absorbed most of stock. Continue adding stock, allowing rice to absorb it before adding the next ladleful. ½ onion or small onion (finely chopped)
1 clove garlic (grated)
1 cup arborio rice
Salt to taste

¼ cup white wine
3-4 cups corn stock (see notes)
3 corn cobs

2 tbsp crème fraiche
1 tbsp basil (chopped)
1 tsp saffron

Steps:

  • Grate two cobs of corn with the help of a grater. Leave the grated corn with the corn milk in a bowl aside until we are ready to use it. With the remaining one cob, carefully remove the corn kernels with the help of a knife. Leave that also aside.
  • Take two tbsp of warm water in a cup, stir in the saffron strands. Mix it with a spoon. Leave it aside.
  • Take the cobs (kernels removed) and about 4 cups of water in a pot and boil it for few minutes in medium to high heat and then let it simmer on low while we make the risotto.
  • In a pan, heat the butter. Then add the garlic and chopped onions. Cook it until onions are translucent. Then add in the rice.
  • Sauté it for few minutes until rice looks translucent. After couple of minutes, add the white wine. Let it get absorbed by the rice. Once all the wine has been absorbed slowly, add ladle full of corn stock that's simmering on the side. Make sure you keep stirring. Rice should not stick to the pan.
  • Again, let the liquid get absorbed completely before adding more corn stock. After half of the the corn stock is added, once the liquid is absorbed add the grated corn mixture along with corn kernels.
  • Finish the cooking with remaining stock and cook it until the rice looks done but has slight al dente texture to it. Add salt and black pepper too.
  • Turn off the heat. Immediately add the parmesan and saffron water to it. Mix it well. Cover it for few minutes.
  • Open the lid of the pan, mix in some chopped basil and crème fraiche.
  • Keep some basil for garnishing. Risotto is best served immediately after its done.

4 ears fresh-picked sweet corn or 2 1/2 cups canned corn
1 1/2 cups chopped onions
1 tablespoon olive oil
1/2 tablespoon butter
1 pinch salt
6 -8 cups delicate vegetable broth (or chicken broth may be substituted)
2 cups arborio rice
3/4 cup dry white wine
2/3 cup grated parmesan cheese
2 tablespoons chopped flat leaf parsley

Steps:

  • (NOTE: If using canned corn, skip this step.) Husk and wash corn and peel away all the silk, then slice the kernels off the cobs with a sharp knife. You should have about 2 1/2 cups corn kernels.
  • Spin about a cup of the kernels in a food processor or blender until they are roughly chopped and milky. Scrape out the chopped corn and remix with the remaining whole kernels.

  • Continue with this process for 25 more minutes (TIP: Set timer now)-- adding a little broth at a time, stirring with a wooden spoon fairly frequently, for around 25 minutes or until the rice is al dente. It should form a creamy sauce around grains that are no longer crunchy but still firm.
  • When the rice is just achieving this perfect balance of tender-firmness, stir in the last ladle of broth, the Parmesan cheese, and 2 Tbsp of chopped parsley.
  • It is ready to serve!
