Number Of Ingredients 7

8 ounces milk (110ºF)
10 grams dried instant yeast ((3 teaspoons))
25 ounces all-purpose flour (or bread flour)
8 ounces butter (softened)
4 ounces sugar
1 teaspoon salt
3 large eggs (room temperature)

Steps:

  • Warm milk to 110ºF. Add in 1 Tablespoon of your sugar and then the yeast and whisk to combine. Set aside for 5 minutes.
  • Add your flour to your mixing bowl and then add in your milk/yeast mixture. Stir on low to combine
  • While mixing on low, add in your sugar, eggs, butter and salt until combined
  • Increase the speed to medium and let mix until the dough cleans the sides of the bowls and feels elastic and smooth. The dough should bounce back when you touch it with your finger. This can take 8 - 12 minutes *do the window test - see blog post for details*
  • Shape the dough into a smooth ball and then place it into a greased bowl. Cover with a tea towel and let rise for 90 minutes in a warm place ***optional***(I pre-heat my oven to 170ºF for five minutes then TURN THE OVEN OFF. It should be barely warm inside. Place a bowl of warm water in the back of the oven and your covered bowl of dough into the oven and shut the door)
  • You can now shape the dough into rolls, make cinnamon rolls, sticky buns etc. See the blog post above for links to other recipes.

STRAWBERRY SWEET ROLLS RECIPE BY TASTY

Strawberry Sweet Rolls Recipe by Tasty image

Here's what you need: unsalted butter, whole milk, granulated sugar, active dry yeast, flour, baking powder, salt, butter, strawberry preserve, cream cheese, butter, whole milk, vanilla extract, powdered sugar

Provided by Julie Klink

Categories     Breakfast

Yield 8 servings

Number Of Ingredients 14

½ cup unsalted butter, melted
2 cups whole milk, warm to the touch
½ cup granulated sugar
1 packet active dry yeast
5 cups flour, divided
1 teaspoon baking powder
2 teaspoons salt
4 tablespoons butter, softened
1 cup strawberry preserve
4 oz cream cheese, softened
2 tablespoons butter, melted
2 tablespoons whole milk
1 teaspoon vanilla extract
1 cup powdered sugar

Steps:

  • Generously grease a 9-inch (23 cm) cast iron or cake pan.
  • In a large bowl, whisk together warm milk, melted butter, and granulated sugar. The mixture should be just warm, registering between 100-110˚F (40˚C). If hotter, allow to cool slightly.
  • Sprinkle the yeast evenly over the warm mixture and let sit for 1 minute.
  • Add 4 cups (500 grams) of all-purpose flour to the milk mixture and mix with a wooden spoon until just combined.
  • Cover the bowl with a towel or plastic wrap and set in a warm place to rise for 1 hour.
  • Preheat oven to 325˚F (160˚C).
  • After 1 hour, the dough should have nearly doubled in size. Remove the towel and add an additional ¾ cup (95 grams) of flour, the baking powder, and salt. Stir well, then turn out onto a well-floured surface.
  • Knead the dough lightly, adding additional flour as necessary, about ½ cup (60 grams), until the dough just loses its stickiness and does not stick to the surface.
  • Roll the dough out into a large rectangle, about ½-inch (12 mm) thick.
  • In a small bowl combine the strawberry preserves and butter, stir to combine.
  • Spread the filling mixture evenly over the rolled out dough, leave about 1½ inches (4 cm) from the edge.
  • Starting from the bottom roll the dough upward, being careful not to squeeze the filling out.
  • With a knife cut the rolled dough into 8 pieces.
  • Place strawberry roll in the prepared cast iron or cake pan and cover with plastic wrap. Place in a warm spot and leave to rise for 30 minutes. The strawberry rolls should expand to the edges of the pan during this time.
  • Bake for 45 minutes. Cover the rolls with foil to prevent the outside from burning, and bake for an additional 35 minutes.
  • While the strawberry rolls are baking, prepare the frosting. In a medium-size mixing bowl, whisk together cream cheese, butter, vanilla, whole milk, and powdered sugar, until smooth.
  • Remove the strawberry rolls from the oven and let cool in the pan for at least 20 minutes. Once cool, drizzle frosting over the rolls before serving.
  • Enjoy!

Tips:

  • Activate yeast properly: Use warm water (around 110°F) and add a pinch of sugar to activate the yeast. Let it sit for 5-10 minutes until it becomes foamy.
  • Use bread flour: Bread flour has a higher protein content than all-purpose flour, which results in a chewier and more flavorful dough.
  • Knead the dough properly: Kneading the dough develops the gluten, which gives the rolls their structure and elasticity. Knead for at least 5 minutes, or until the dough is smooth and elastic.
  • Let the dough rise in a warm place: The dough should rise in a warm place (around 75-80°F) until it has doubled in size. This usually takes about 1-2 hours.
  • Shape the rolls: You can shape the rolls into any shape you like. Some popular shapes include balls, braids, and knots.
  • Bake the rolls at a high temperature: Bake the rolls at a high temperature (around 375-400°F) for 15-20 minutes, or until they are golden brown.

Conclusion:

Sweet dough rolls are a delicious and versatile treat that can be enjoyed for breakfast, lunch, or dinner. They are easy to make and can be customized to your liking. With a little practice, you can make perfect sweet dough rolls that will impress your family and friends.
