Tips:
- Use Fresh Sweet Corn: Fresh sweet corn is the star of this dish, so make sure to use high-quality corn on the cob. Look for ears with plump, tightly packed kernels and no signs of damage or discoloration.
- Sauté the Onions: Sautéing the onions until they are softened and caramelized adds a rich, sweet flavor to the casserole. Be sure to cook them over medium heat so that they don't burn.
- Use a Variety of Cheeses: The combination of sharp cheddar cheese, cream cheese, and Parmesan cheese creates a flavorful and creamy sauce. Feel free to experiment with different types of cheeses to create your own unique flavor profile.
- Add Some Herbs: Fresh herbs like thyme, rosemary, or basil add a pop of flavor to the casserole. Stir them in just before baking so that they don't lose their potency.
- Don't Overcook: The casserole is done when the corn is tender and the cheese is melted and bubbly. Overcooking will result in a dry and tough casserole.
