This quick and easy recipe comes from the Renees Dressing that is used in the salad....I've modified it slightly. It is absolutely delicious....sweet and tangy and refreshing...and the colour of it is beautiful. You should prepare it just before serving, which may be it's only setback, but it doesn't take long. I hope you enjoy it!

This is so tasty.

Categories     Dressings

Time 15m

Number Of Ingredients 9

1/2 large sweet vidalia onion roasted
10 clove garlic
1/4 c fresh parsley chopped
1/4 c sugar
1/4 c dijon mustard
2 c extra virgin olive oil
1/3 c champagne vinegar
1/2 c water
1 tsp each salt and pepper

Steps:

  • 1. Preheat oven to 425 degrees. Place the onion on a baking pan drizzle with a little olive oil. Roast until the onion is nice and browned. Remove from oven and let cool
  • 2. Place the onion in a food processor with the rest of the ingredients. Process until well incorporated

Tips:

  • Choose the right onions: Yellow or white onions are best for this vinaigrette, as they have a milder flavor than red onions.
  • Slice the onions thinly: This will help them soften and release their flavor into the vinaigrette.
  • Use a good quality olive oil: The olive oil is the base of the vinaigrette, so it's important to use a good quality one that you enjoy the taste of.
  • Add some sweetness: A little bit of honey or maple syrup can help to balance out the acidity of the vinegar and add a touch of sweetness to the vinaigrette.
  • Don't be afraid to experiment: There are many different ways to make a sweet onion vinaigrette, so feel free to experiment with different ingredients and flavors until you find one that you love.

Conclusion:

Sweet onion vinaigrette is a versatile dressing that can be used on a variety of salads, vegetables, and even grilled meats. It's easy to make and can be tailored to your own personal taste. So next time you're looking for a delicious and healthy dressing, give sweet onion vinaigrette a try.
