So I grew up in Cincinnati. 18 years of Cincy Chili, Ribs, Ice Cream, and, of course, LaRosa's Pizza, whose sauce is flavorful and SWEET. Now that I've been away, I find you can't get any pizza remotely close ANYwhere else. Now this is no copycat recipe, but it captures the spirit of Buddy L's pizza sauce. It complements vegetable toppings as well as meats... My wife and I have not ordered pizza out since this sauce was concocted... I HIGHLY recommend using caetb's pizza dough with this sauce. (Recipe #38512 - the one with the wine...) I put the ingredients in the bread machine and it turns out great every time. I cook the finished pizza between 400 and 425 degrees fahrenheit for 9-12 minutes on a normal cookie sheet, or 11-15 minutes on an "air cookie sheet." (My wife and I prefer the normal cookie sheet, so the crust cooks and the cheese doesn't burn...) I'd love to hear feedback from others, especially misplaced Cincinnati Folks - let me know your thoughts! Mike's Notes: Since I concocted and posted this recipe, I have been back to Cincinnati... 2 tablespoons olive oil
1 (28 ounce) can tomato puree
1 teaspoon dried onion, minced or chopped
1/2 teaspoon dried basil

  • Freeze leftover sauce until ready to use; When using on pizza dough, thaw to room temperature; Thaws nicely in the microwave.
  • Don't use too much pepper.
  • You can mince a baby carrot in the garlic press after microwaving it for 5-10 seconds- just cut it in half before putting it through the press- and that equals about 1/2 Tablespoon.
  • Either Light or Dark Brown Sugar is fine, but the dark brown sugar makes the sauce DEEP red- almost maroon.
  • If you want the sauce even sweeter, just add more Honey next time.

2 Tbsp olive oil, extra virgin
1 clove garlic, minced
3 Tbsp tomato paste
1 pinch red-pepper flakes, or to taste
28 oz diced tomatoes, 1 can
1 tsp dehydrated onions, crushed into a powder
1/2 tsp dried basil
1/2 tsp dried oregano
1/4 tsp dried parsley
1 - 2 Tbsp fresh clover honey, or to taste
salt, kosher variety, to taste

Steps:

  • 1. PREP/PREPARE
  • 2. A good solid saucepan, without any hotspots, is essential to this recipe.
  • 3. What gives this sauce its unique flavor is not just the honey, but the proper cooking of the tomato paste. We are going to cook it, almost to the point of caramelization. One minute it will be nice and brown, and the next it will be a burned mess. Once that process is started, you will never leave the pan unattended.
  • 4. One of my favorite brands of tomatoes is Cento. I think that they have the perfect balance of tomato flavors to compliment this recipe.
  • 5. Gather your Ingredients (mise en place).
  • 6. Add the olive oil to a saucepan, over medium-low heat.
  • 7. When the oil heats up, add the chopped garlic.
  • 8. Cook until it turns a golden brown, about 2 - 3 minutes.
  • 9. Use a strainer to remove the garlic from the oil, and then return the oil to the saucepan.
  • 10. Add the tomato paste, and red-pepper flakes, if using.
  • 11. Raise the heat to medium, and cook until the tomato paste begins to turn brown, and almost caramelizes, about 5 - 7 minutes.
  • 12. Add the tomatoes, dehydrated onions, basil, oregano, and parsley.
  • 13. Bring up to a light boil, then lower the heat, and lightly simmer for 20 - 30 minutes.
  • 14. Chef's Note: Give the sauce a swirl with a spoon, about every minute or so.
  • 15. Remove from the heat, and add the honey, and salt, to taste.
  • 16. Add to a blender or food processor, and blend until smooth.
  • 17. Allow to completely cool, place in a jar, with a tight-fitting lid, and place in the fridge until needed.

1/2 teaspoon yeast
2 cups unbleached all-purpose flour
1/2 teaspoon salt
2 tablespoons olive oil
1 tablespoon garlic, minced
1/2 tablespoon red pepper olive oil (or red pepper flakes)
4 tablespoons sugar (divided)
1 (14 ounce) can diced tomatoes, drained
1 cup prepared tomato sauce (we used Classico Roasted Garlic)
1 tablespoon brown sugar
1 tablespoon balsamic vinegar
1/2 teaspoon basil
1/2 teaspoon oregano
1 bay leaf
salt and pepper, to taste

Steps:

  • Pre-heat your oven to 500 degrees. If you have a baking stone, put it on a rack in the lower-middle part of the oven.
  • In a small bowl or liquid measuring cup, heat the water until it feels barely lukewarm when you test it with your finger (if the water is so hot that you can't leave your finger in it, wait for it to cool down). Add the yeast to the water and use a fork or whisk to stir it into the water. Set this aside for a few minutes and allow the yeast to dissolve.
  • Measure out the flour into a large mixing bowl. Add the salt and use your hand or a whisk to combine.
  • Make a well in the center of the flour and pour in the water-yeast mixture. Use your fingers or a wooden spoon to combine everything together.
  • When it comes together into a cohesive ball, turn it out onto the counter along with any extra flour in the bowl that hasn't yet gotten worked inches.
  • Knead the dough until all the flour is incorporated and the dough is smooth and elastic to the touch--about five minutes.The dough should still feel moist and slightly tacky. If it's sticking to your hands and counter-top like bubble gum, work in more flour one tablespoon at a time until it's smooth and silky.
  • Use a bench scraper to divide the dough in two. Shape each half into a smooth ball. Set aside while preparing sauce.
  • Heat olive oil in a sauce pan over medium heat. Add minced garlic and red pepper olive oil (or a little extra olive oil, plus red pepper flakes).
  • Saute 2 minutes, or until garlic is golden. Add half of the white sugar, and allow to melt (it might start to look clumpy, don't worry and keep going).
  • Add drained tomatoes and the rest of the white sugar. Cook for 2 minutes.
  • Add the rest of the ingredients (prepared sauce, brown sugar, balsamic vinegar, basil, oregano, bay leaf, salt, and pepper). Lower heat to medium-low and simmer for 20 minutes. You can break up the tomatoes with a wooden spoon, or use an immersion blender if you prefer.
  • Work one piece of the dough in your hands and form it into a large disk. Working from the middle of the dough outwards, use the heel of your hand to gently press the dough outward until it's about 1/4 of an inch thick or less. You can also use a rolling pin for this part.
  • Repeat with the second piece of dough (or freeze it for later).
  • Place pizza dough on baking stone or baking sheet with cooking spray.
  • Spoon a few tablespoons of sauce into the center of each pizza and use the back of a spoon to spread it out to the edges. Pile on all of your toppings except the cheese.
  • Bake for about 5 minutes and then rotate the pizza 180-degrees (most ovens have 'hot spots' your pizza will bake unevenly if it's not rotated). Bake for another 3 minutes and then sprinkle the cheese over the top. Bake for another 2-3 minutes until the edges are golden brown and crispy.
  • Remove your pizza from oven and let it cool on a wire rack for a few minutes before cutting.

1 c warm water
1 Tbsp sugar
1 tsp salt
1 tsp dried basil

3 c flour
PIZZA SAUCE:
1 can(s) (6 oz.) Contadina Italian herb tomato paste
1 can(s) (14.5 oz.) Del Monte stewed tomatoes, mostly drained
1/4 Tbsp garlic powder
1/4 tsp oregano
1/4 tsp sugar
PIZZA INGREDIENTS:
1 lb ground mild Italian sausage, i always use Johnsonville, it's the best
1 (8 oz.) container fresh mushrooms, sliced
1 medium green bell pepper, diced or julienned
1 medium shallot, halved and sliced very thin
36 slice pepperoni
1 can(s) (2.25 oz.) sliced black olives, drained
1 2/3 c homemade pizza sauce, recipe above
3 tsp ground Parmesan cheese
2 lb shredded mozzarella cheese

  • 1. For pizza dough: In large mixer bowl, combine water, yeast, sugar and salt. Let sit til foamy on top. Beat in oils, basil, garlic powder and half of the flour. Beat for 10 minutes. Add remaining flour and cheese. With dough hook, pulse til incorporated. Continue kneading on medium for 10-12 minutes til smooth and no longer sticks to the sides of the bowl. Transfer to large oiled bowl, cover with plastic wrap and let rise in warm place for 1 hour or til doubled in size. Punch down, rise again. Roll out onto floured board or freeze to store. Makes 2-12" pizzas or 1 deep dish.
  • 2. For the sauce: In blender or food processor, pulse til combined and coarse chopped.
  • 3. To make pizza: Break up sausage into nickel-sized pieces and saute til done. Remove to paper towel-lined bowl. In small bowl, place cut up peppers and shallots, sprinkle with water, cover with paper towel and nuke about 1 minute til softened a little. In 9" wide, 3" deep oiled cast iron skillet, place thinly rolled out dough. (Across bottom, up sides and overhang an inch.) *Save aside 3/4 lb. mozzarella cheese and 1/3 cup sauce for top. Cover bottom with 1" deep layer of mozzarella. Sprinkle with 1 tsp Parmesan cheese, then half of pizza topping ingredients of choice sprinkling with a little more mozzarella after each ingredient. Drizzle evenly with about 2/3 cup pizza sauce. Cover with 1" layer of mozzarella. Press gently. Sprinkle with 1 tsp Parmesan. Repeat ingredients adding in last of cheeses except top amount. Drizzle with 2/3 cup sauce. Top with 3/4 lb. mozzarella. Roll up overhang of dough to inside of skillet around edge. Brush dough with oil. Bake in 400-degree oven for 30 minutes. Remove, top center with last 1/3 cup sauce, bake 5 minutes longer. Let rest before cutting.

1/4 cup toffee pieces
1 cup pretzel

Steps:

  • Preheat the oven to 350°F Line a large baking sheet with parchment paper.
  • On the prepared sheet, arrange the cookie dough rounds in a single layer in a round shape. Use your fingers to press the dough together to close the gaps and form an 8-inch circle. Make the center thinner and the edges thicker. Press the toffee bits and pretzels into the dough.
  • Bake until golden brown and cooked through, about 18 minutes. Cool completely on the sheet on a wire rack. Cut into wedges.

2 3/4 tsp. baking powder
3/4 tsp. salt
3 tbs. olive oil
1/2 cup water
1/2 cup milk
For the Sauce:
3 long hot Italian peppers - remove seeds and slice
3 red bell peppers - sliced
4 cloves of garlic - chopped
1 sweet onion - sliced
2 cups dried apricots - chopped
28 oz. can of crushed tomatoes
1/4 cup red wine
1/2 cup fresh basil - chopped
1/2 tsp. red pepper flakes
1 tsp. salt
1 tsp. dried oregano
2 tablespoons olive oil
8 oz. shredded mozzarella or your favorite shredded cheese
Romano or Parmesan cheese - for grating
Cornmeal
More Olive oil (for drizzling)

  • Dough: Combine the flour, baking powder and salt. Make a well add the water and olive oil. Stir with a fork. Make another well and slowly add the milk; stirring with a fork. If dough is too dry add a touch more water. Try to get it just right. Form into ball. Dust a little flour on a clean surface and knead the dough for 3-4 minutes. Dough should feel soft and springy. Gently roll out the dough. For the Sauce: Heat a cast iron frying pan with the olive oil. Add the sliced peppers, onions, garlic and apricots. Sauté until the onions are clear and the peppers become slightly charred and soften. Add the crushed tomatoes, wine and seasonings. Simmer the sauce on low while preparing the dough. Dust the pizza pan with cornmeal. Roll out the dough to loosely fit the pizza pan. Top with the sauce, shredded cheese, grated cheese and a tablespoon or two of olive oil. Preheat Oven 375 degrees: Bake the pizza until it is golden and beautiful; about 20-25 minutes.

I was on my way home one night dreaming of pizza. I wanted something other than capsicum, mushrooms, olives and soy cheez and I wanted a hint of heat too. This is what I came up with! This makes one medium pizza and I imagine that omni's would like it too.

1 tablespoon vegan margarine
1 tablespoon flour
1 teaspoon curry powder
120 ml soymilk
1 pizza crust (pre-prepared and vegan friendly or make your own)
1 tablespoon olive oil
1 teaspoon crushed garlic
100 g sweet potatoes (peeled and sliced 2mm thin)
2 tablespoons chickpeas (cooked, drained and rinsed)
red onion (two thin rings, seperated)
handful rocket
1/2 red capsicum (bell pepper, sliced and diced)
1 tablespoon coriander (chopped finely)
1/4 fresh chili pepper (optional, sliced thinly)

Steps:

  • TO MAKE CURRY SAUCE.
  • Melt margarine in a small saucepan and remove from stove.
  • Stir in flour and curry powder until smooth.
  • Return to stove and gradually add the soy milk, stirring continuously until thickened. Place to the side.
  • TO MAKE PIZZA.
  • Pre-heat oven to 230°C.
  • Mix the oil and garlic together and spred onto the pizza base and then spread the curry sauce evenly over this.
  • Lightly steam the sweet potato until just tender (I use a steamer bag in the microwave for 45 secs) and then place onto the curry sauce base.
  • Follow with chickpeas, onion, rocket and capsicum.
  • Place in oven for 8 minutes for pre-prepared pizza (as per instructions for homemade).
  • Upon removal, evenly distribute coriander and chilli (if using) over the top of the pizza.

There are a lot of fruit pizza recipes out here, but this one has a twist, it uses a regular pizza dough crust (I use recipe #117941 with 1/2 cup sugar added and it makes two pizza crusts), and the toppings make it look like a "regular pizza." Really good and super fun for kids to make too. And as a bonus, if you are careful about the white chocolate you use, I think it could be considered vegan. Feel free to experiment!

1 pizza crust
1/2 cup strawberry jam (or raspberry, or any red jam or jelly)
3 ounces white chocolate (or use almond bark)
1/4 cup walnuts, chopped
4 strawberries

  • Make pizza dough according to directions but add about 1/2 cup extra sugar to make it sweet. Bake the dough empty. Cool.
  • Spread with jam/jelly.
  • Using a potato peeler or grater, add enough white chocolate shavings to look like cheese.
  • Sprinkle on walnuts to look like sausage.
  • Slice strawberries to look like pepperoni slices.
  • Sprinkle with green sugar or other green cookie sprinkles if you want to simulate oregano.
  • I find that it looks best the first day. But tastes great even if the strawberries dry out a little --

1 ½ cups water

All-purpose flour, for dusting
8 ounces/225 grams low-moisture mozzarella or Fontina, grated
