SWEET POTATO CASSEROLE WITH EGGNOG

Sweet Potato Casserole with Eggnog image

This is a great casserole--not too sweet. I've adapted it from several other recipes. I usually double this for Thanksgiving. To make lighter version replace the eggnog with skim milk and use reduced calorie margarine.

Tips:

  • Choose the right sweet potatoes. Look for firm, deep-orange sweet potatoes that are free of blemishes. Avoid any potatoes that have soft spots or sprouts.
  • Cook the sweet potatoes until they are very tender. This will ensure that they are easy to mash and will create a smooth casserole.
  • Use a good quality eggnog. This is the key ingredient in the casserole, so make sure you use one that you like the taste of.
  • Don't overmix the casserole. Once you have combined all of the ingredients, mix just until everything is well combined. Overmixing will make the casserole tough.
  • Bake the casserole until it is golden brown and bubbly. This will ensure that it is cooked through and has a delicious crust.

Conclusion:

Sweet potato eggnog casserole is a delicious and easy-to-make holiday dish. It is perfect for potlucks and family gatherings.
