Tips:

  • Mise en Place: Before starting, measure and prepare all ingredients. This will ensure a smooth and efficient baking process.
  • Choose the Right Sweet Potatoes: Select firm and brightly-colored sweet potatoes for the best flavor and texture.
  • Use Freshly Brewed Coffee: Freshly brewed coffee provides a richer and more pronounced flavor to the cake.
  • Cream the Butter and Sugar Thoroughly: This step incorporates air into the mixture, resulting in a light and fluffy cake.
  • Gradually Add Eggs: Add eggs one at a time, beating well after each addition. This prevents the batter from curdling.
  • Fold In Dry Ingredients Gently: Use a spatula to gently fold in the dry ingredients until just combined. Overmixing can result in a tough cake.
  • Roasted Pecans: To enhance their flavor, toast the pecans in the oven before adding them to the batter.
  • Use a Bundt Pan: A Bundt pan creates a beautiful and elegant presentation for the coffee cake.
  • Check for Doneness: Insert a toothpick into the center of the cake. If it comes out clean, the cake is done baking.
  • Glaze the Cake: While the cake is still warm, drizzle it with a simple glaze made from powdered sugar and milk. This adds a sweet and shiny finish.
