SWEET POTATO, SPINACH AND MEXICAN CHORIZO SOUP
A pot of soup steaming away on the stove is a great way to chase away the chill. You can substitute any other kind of fresh sausage for the chorizo in this soup, like a spicy Italian sausage or even breakfast sausage, although you might want to spice the broth up with some red chile flakes if you use a mild one. This soup comes together quickly once you brown the sausage-basically just put everything in the pot and let the heat do its magic. A generous amount of chopped cilantro at the end adds amazing flavor.

CHICKEN, SWEET POTATO AND SPINACH SOUP
My mom made this for me every time I was sick; it was the only thing I could keep down. It was mild but I love it even when I'm not under the weather. She would use her own roasted chickens, but when I'm not feeling well I don't feel like roasting my own chicken, and the store-bought ones work in a pinch. Serve with crusty bread.

POTATO AND CHORIZO CASSEROLE
I love the smoky flavor chorizo gives this dish, but I've also made it with Italian sausage and substituted an Italian blend cheese for the Mexican cheese. Or you can use cream of mushroom soup and fresh mushrooms for a vegetarian option. -Ana Beteta, Aberdeen, Maryland

Steps:
- In a large pan, heat the oil, red onion and chilli flakes until soft.
- Add the peeled and chopped sweet potato, spinach and vegetable stock.
- Bring to the boil and simmer for 15 minutes before serving.
- If you prefer a smoother soup, pour into a blender and blitz until desired consistency is achieved.
Tips:
- Prep your ingredients beforehand. Chop the vegetables, dice the chorizo, and measure out the spices and seasonings before you start cooking. This will make the cooking process go much smoother and faster.
- Don't be afraid to adjust the spice level. If you like your soup spicy, add more chili powder or cayenne pepper. If you prefer a milder soup, reduce the amount of these spices or omit them altogether.
- Use a good quality Mexican chorizo. This will make a big difference in the flavor of the soup. Look for a chorizo that is made with fresh, high-quality ingredients.
- Don't overcrowd the soup pot. If you add too many ingredients at once, the soup will be watery and bland. Add the ingredients in batches, and let the flavors meld together before adding the next batch.
- Simmer the soup for at least 30 minutes. This will allow the flavors to develop and deepen. The longer you simmer the soup, the better it will taste.
- Serve the soup with your favorite toppings. Some popular toppings include sour cream, shredded cheese, diced avocado, and cilantro.
Conclusion:
This sweet potato, spinach, and Mexican chorizo soup is a delicious and easy-to-make meal that is perfect for a cold night. The soup is packed with flavor and nutrients, and it is sure to be a hit with your family and friends. So next time you're looking for a hearty and satisfying soup, give this recipe a try.
