6 pounds chicken wings, separated at joints, tips discarded
1 ½ cups Louisiana-style hot sauce
¾ cup butter
1 cup honey
1 pinch garlic salt
1 pinch ground black pepper
1 teaspoon cayenne pepper, or to taste

Steps:

  • Preheat an outdoor grill for high heat.
  • Lightly oil the grill grate. Grill the chicken 8 to 12 minutes on each side, or until juices run clear. (You can deep fry or bake the chicken instead if you want to, but it is best when grilled.) Remove chicken to a large roasting pan.
  • In a saucepan over medium heat, mix the hot sauce, butter, honey, garlic salt, black pepper, and cayenne pepper. Simmer about 10 minutes, until blended and heated through. Pour the sauce over the grilled chicken wings and stir to coat.

2 pounds chicken wings
1/4 cup olive oil
2 tablespoons lime juice, plus 1 lime cut into wedges
One 1.06-ounce packet mesquite grill seasoning mix, such as McCormick's Grill Mates Mesquite Marinade
2 tablespoons thinly sliced scallions
1 tablespoon fresh cilantro leaves

Steps:

  • Preheat a grill for cooking over medium heat.
  • Combine the chicken wings, oil, lime juice, seasoning mix and 2 tablespoons water in a resealable bag and toss well to coat. Spread out a large sheet of aluminum foil, then pour the contents of the bag into the center. Fold the foil over in half to cover and crimp the edges to seal.
  • Place the foil packet on the grill and cook for 25 minutes. Open the packet carefully, watching out for steam. Transfer the wings to the grill and cook until marked on both sides, about 2 minutes more per side.
  • Arrange the wings on a plate and garnish with the scallions, cilantro and lime wedges.

1 tablespoon baking powder
1/2 cup light brown sugar
2 tablespoons kosher salt

1 tablespoon Hungarian paprika
1 tablespoon chili powder
1 1/2 teaspoons garlic powder

Steps:

  • For the wings: Preheat your oven to 450 degrees F. Line a rimmed baking sheet with foil and brush the foil with the oil.
  • Pat the wings dry with paper towels, then sprinkle with the baking powder and toss to evenly coat in a large mixing bowl. Spread the wings evenly on the prepared baking sheet. Bake until golden brown, crispy and cooked through, 25 to 30 minutes, flipping halfway through.

1 lb boneless skinless chicken breast
2 teaspoons rice wine
1 large egg white
1 tablespoon cornstarch
1/4 teaspoon salt
2 tablespoons peanut oil
3/4 cup red bell pepper, seeded and sliced
1/2 cup onion, sliced
1 1/2 cups canned pineapple chunks, drained
1/2 cup Thai sweet chili sauce
1/2 teaspoon chili-garlic sauce (optional-if you like it hot)
2 cups cooked white rice

Steps:

  • Whisk the egg white, cornstarch, rice wine, salt and 1 Tablespoon of oil in a medium bowl until smooth.
  • Add the sliced chicken and stir until coated.
  • Refrigerate (marinate) 30 minutes.
  • Start rice cooker.
  • Drain chicken in colander.
  • Add 1-2 inches of water plus 1 Tablespoon oil to the skillet. Bring to a full boil over high heat.
  • Reduce the heat to medium-low. Immediately add chicken strips, individually, to the almost-boiling water. Stir with slotted spoon so they don't stick together.
  • Once the water comes back to a barely-bubbling simmer, cook the chicken strips for 1 minute longer, stirring occasionally.
  • After 1 minute, remove the chicken with a slotted spoon into the colander to fully drain.
  • Put the drained strips into bowl and cover with plastic wrap.

1 cup brown sugar
1/2 cup honey
2 tablespoons butter
5 lbs chicken wings, uncooked

  • brown wings on a broiling pan on top rack of the oven for 10 min each side.
  • tranfer wings into slow cooker.
  • warm "franks red hot" in medium sauce pan.
  • add butter.
  • after butter melts add brown sugar and honey.

12 whole chicken wings, cut in half at the joint, with tips discarded or saved for stock
2 cups (450 grams) tempura flour
2 1/2 quarts (2.8 liters) vegetable oil, for frying
2 cups (450 grams) cornstarch

Steps:

  • Stir the sweet chile sauce and sriracha together in a large bowl. You will be frying the wings and rolling them in this sauce while they're hot.
