5 large sweet onions, cut into 1/4 inch slices and separated into rings
¼ cup margarine
¼ cup sour cream
¾ cup grated Parmesan cheese
10 buttery crackers

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
  • Melt the margarine in a large skillet over medium heat. Add onions; cook and stir until tender. Turn off the heat, and stir in the sour cream and Parmesan cheese. Transfer to the prepared baking dish, and crumble the crackers over the top.
  • Bake uncovered for 30 minutes in the preheated oven, until the top is browned and the sauce is bubbly.

¾ cup uncooked basmati rice
5 cups water
¼ cup butter
3 pounds sweet onions, coarsely chopped
1 cup half-and-half cream
1 ½ teaspoons salt
2 cups shredded Swiss cheese, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter a 2-quart baking dish.
  • Bring water to a boil in a large saucepan, and sprinkle in the rice. Stir, reduce heat to low, and simmer the rice until it is half-cooked, about 5 minutes. Drain the rice, and set aside.
  • Melt the butter in a large skillet over medium heat, and cook and stir the onions until translucent but not browned, about 8 minutes. Mix the cooked onions and the butter from the skillet with the rice, and stir in the half-and-half, salt, and 1 3/4 cup of the Swiss cheese. Transfer the mixture to the prepared baking dish, and sprinkle the remaining 1/4 cup of Swiss cheese over the top.
  • Bake uncovered in the preheated oven until the rice is tender and the top is lightly browned, about 1 hour.

2 tablespoons butter
3 large sweet onions, sliced
2 cups shredded Swiss cheese, divided
Pepper to taste
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
2/3 cup whole milk
1 teaspoon soy sauce
8 slices French bread, buttered on both sides

Steps:

  • In a large skillet, melt butter. Saute onions until translucent and slightly brown. Layer onions and two-thirds of the cheese in a 2-qt. baking dish, sprinkling pepper between layers. , In a saucepan, heat soup, milk and soy sauce; stir to blend. Pour over onions and stir gently. Pepper to taste

I found this recipe somewhere on the Internet a few years ago and sent it to my mom. She made it and it was very good, so it has become a staple for family dinners. It's a great accompaniment to plain roasted, baked, or grilled meats or fish, and it's just as good reheated as leftovers as it is when first made.

4 large onions (white or sweet)
1 (12 ounce) can evaporated milk
1/4 cup margarine
1/2 cup uncooked rice (not 5-minute or quick cooking style)
2 cups water
8 ounces swiss cheese, grated (plus extra cheese to top casserole, if desired)

Steps:

  • Spray a large casserole dish with Pam. Set it aside.
  • Slice onions into rings and separate them.
  • Bring 2 cups of water and 1/2 cup of rice to a boil. Let it boil for 5 minutes; remove from heat and drain water.
  • Heat 1/2 stick of butter in large skillet and add onions. Let onions sauté until translucent -- not browned.

7 1/2 cups chopped onions
7 (6 1/2 ounce) cans mushrooms, drained
7 1/2 cups diced cooked ham
7 1/2 cups diced swiss cheese
7 1/2 teaspoons salt (I would cut that back taste then decide)
3 3/4 teaspoons ground black pepper
15 eggs
1 3/4 cups milk, plus
2 tablespoons milk
1 3/4 cups grated parmesan cheese, plus
2 tablespoons grated parmesan cheese

  • Bring a large pot of lightly salted water to a boil.
