Swiss chard fritters, or crispeddi chi giri as we call them in Sicilian, made with tender swiss chard leaves fresh from the garden stirred into a pastella (batter) made of eggs; flour; water and parmesan cheese and lightly fried. A tasty snack, appetizer or side dish!

1 bunch swiss chard ((8-10 leaves: about 10 cups loosely packed before cooking))
2 large eggs
1 cup all-purpose flour
1/2 tsp baking powder
1/2 cup water (or more as needed )
3/4 tsp salt
2-3 tbsp. grated parmesan cheese
3 tbsp. vegetable oil (or canola or sunflower oil )

Steps:

  • Rinse one bunch of swiss chard (about 8-10 large leaves) well making sure to remove all traces of dirt along the stems. Roughly chop the stems along with the leaves. You may choose to remove the stems, if you prefer, and reserve them for another use.
  • Bring a large pot of salted water to a boil. If using, add the stems first and boil for 2 minutes. Add the leaves and boil for 1 minute longer. Remove with a slotted spoon and transfer to a bowl to cool.
  • In a large bowl combine eggs; flour; baking powder; water; salt and pepper. Whisk the ingredients until smooth. The batter will have a thick, pancake like consistency. If it is too thick, add extra water 1 tbsp. at a time.
  • Squeeze some of the water (it does not need to be completely dry) out of the swiss chard and add to the batter along with the grated parmesan.
  • Heat vegetable oil on medium high heat in a large skillet. Spoon batter (about 2 tablespoonfuls) into the hot oil. Cook until browned, about 2 minutes. Flip with a spatula and cook until the underside is browned, about 2 more minutes.
  • Transfer to a paper towel lined tray to absorb excess oil. Serve hot or at room temperature

This recipe, adapted from "Jerusalem," by Yotam Ottolenghi and Sami Tamimi, appeared in The Times in 2012 as part of a Hanukkah food article. It is packed with fragrant dill and cilantro, and studded with feta. The fritters would go well with smoked salmon and a little yogurt, or a garlicky spread of beets, dill, walnuts and horseradish that pulls from the Ashkenazi tradition. Either way, they are a great vegetable counterpoint to the starchier dishes of Hanukkah. They cook fast, and should be served warm.

14 ounces (2 bunches) Swiss chard leaves, stems removed
1/2 cup chopped Italian parsley
1/4 cup chopped cilantro
1/4 cup chopped dill
1 1/2 teaspoons grated nutmeg
1/2 teaspoon granulated sugar
3 tablespoons all-purpose flour
2 cloves garlic, chopped
2 large eggs
3 ounces crumbled feta cheese (1/2 cup)
Olive oil
Lemon wedges, for serving (optional)

Steps:

  • Bring a large pot of salted water to a boil, add chard and simmer for 5 minutes. Remove from pot and drain well, patting leaves dry with a paper or kitchen towel.
  • Place chard in food processor with herbs, nutmeg, sugar, flour, garlic and eggs. Pulse until well blended. Fold in feta by hand.
  • Heat 1 tablespoon oil in a large sauté pan over medium-high heat. When oil is hot, spoon in 1 heaping tablespoon of mixture for each fritter (you should be able to fit three fritters per batch). Press down gently on fritter to flatten. Cook 1 to 2 minutes per side, until golden brown. Transfer to a baking sheet lined with paper towels. Add another tablespoon oil to pan and repeat. Serve warm, with lemon wedges (optional).

1 1/4 cups all-purpose flour, plus more for dusting
1/2 teaspoon sugar
1/2 teaspoon fine salt
1 stick cold unsalted butter, cut into small pieces
Cooking spray
1 bunch Swiss chard
2 tablespoons extra-virgin olive oil
1 medium onion, chopped
Kosher salt and freshly ground pepper
Kosher salt and freshly ground pepper
1/4 cup chopped fresh dill
1 teaspoon grated lemon zest
1/2 cup chopped fresh parsley
1 cup shredded aged cheddar cheese, plus 1/4 cup shaved aged cheddar for topping
1/2 cup half-and-half
1/4 cup grated parmesan cheese
1 large egg, lightly beaten
1/8 teaspoon freshly grated nutmeg

Steps:

  • Make the crust: Put the flour, sugar and fine salt in a food processor and pulse to combine. Add the butter and pulse until the mixture looks like coarse meal. Add 2 tablespoons ice water and pulse until the dough just comes together, adding up to 2 more tablespoons ice water if needed. Transfer to a sheet of plastic wrap and pat into a disk; wrap and refrigerate until firm, about 1 hour.
  • Coat a 9-inch springform pan with cooking spray. Roll out the dough into a 12-inch round on a floured surface. Ease into the prepared pan and press into the bottom and up the side; trim to make a 2-inch-high crust. Prick the bottom a few times with a fork; refrigerate 30 minutes. Preheat the oven to 350 degrees F.
  • Place the dough-lined pan on a baking sheet. Line the dough with foil and fill with pie weights or dried beans. Bake until the edges are just lightly golden, about 20 minutes. Remove the foil and weights; continue baking until the crust is lightly golden all over, 15 to 20 more minutes. Transfer to a rack to cool completely. (The crust can be made a day ahead; cover and store at room temperature.)
  • Make the filling: Thinly slice the Swiss chard leaves and cut the stems into 1/4-inch slices. Heat the olive oil in a large skillet over medium-high heat. Add the onion and chard stems, season with kosher salt and pepper and cook, stirring occasionally, until the onion is soft and just beginning to brown, about 10 minutes. Add the dill and lemon zest and cook, stirring, 30 seconds. Add the chard leaves and cook, stirring, until wilted, about 4 minutes. Remove from the heat and stir in the parsley, 3/4 teaspoon kosher salt, and pepper to taste. Let the filling cool, then squeeze out the excess moisture.
  • Transfer the filling to a food processor; pulse until coarsely chopped. Transfer to a bowl and stir in the shredded cheddar, half-and-half, parmesan, egg and nutmeg. Pour into the crust and bake until set, 45 to 50 minutes. Top immediately with shaved cheddar and let melt. Serve warm or at room temperature.

1 1/2 bunches Swiss chard (about 1 pound, 3 ounces), stemmed
1 teaspoon kosher salt, divided, plus more
1 tablespoon coriander seeds
1/2 teaspoon caraway seeds
1 bunch parsley
1 bunch cilantro
1 bunch dill
3 medium onions, grated on large size box grater, excess water squeezed out using a paper towel
1 tablespoon harissa pepper paste
3/4 cup plain unseasoned breadcrumbs
1/4 teaspoon freshly ground pepper
6 large eggs, divided
Vegetable oil (for frying; about 1 1/2 cups)
Plain Greek-style yogurt (for serving; optional)

  • Season chard with 1/2 tsp. salt. Let sit in a colander 10 minutes. Squeeze out excess water with your hands. Transfer to a cutting board and chop.

  • Pour oil into a large heavy skillet to a depth of 1/4" and heat over medium until shimmering. Beat remaining 3 eggs to blend in a medium wide shallow bowl.
  • Dip each patty into egg, letting excess drip back into bowl. Working in batches, fry patties until set and a golden brown crust forms, 3-4 minutes per side. Transfer to a paper towel-lined plate; season with salt.

1 egg, separated
1 tablespoon extra virgin olive oil
3/4 cup sparkling water
1 1/2 cups finely chopped fresh herbs or a mix of herbs and greens (such as spinach or chard)

Steps:

  • Mix together flours, baking powder and salt in a large bowl. Make a well in the center and add egg yolk and oil. Beat egg yolk and oil together, add sparkling water and mix in flour. Whisk until smooth. Cover with plastic and let sit for 2 hours.
  • Beat egg white to stiff but not dry peaks and fold into batter. Fold in finely chopped herbs and greens.
  • Pour oil into a wok or wide saucepan to a depth of 3 inches and heat over medium-high heat to 360 to 375 degrees. Set up a sheet pan with a rack on it next to pan. Cover rack with a few layers of paper towels. Have a spider or deep fry skimmer handy for removing fritters from oil.

1 1/2 tablespoons extra virgin olive oil
1 garlic clove, minced
1 (15 ounce) container whole milk ricotta cheese
1/2 cup freshly grated parmesan cheese
2 large eggs
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/4 teaspoon minced fresh thyme
1/4 teaspoon minced fresh oregano
1/8 teaspoon grated nutmeg
1 (17 1/3 ounce) package frozen puff pastry, thawed (2 sheets)

Steps:

  • Cook chard in large pot of boiling salted water until just wilted, about 2 minutes. Drain. Squeeze out liquid. Chop chard.
  • Heat oil in heavy large skillet over medium heat. Add garlic; saute 1 minute.

  • Roll out second pastry sheet to 13-inch square. Using tart pan as guide, trim pastry square to 10-inch round. Drape over filling. Seal and fold in edges.
  • Bake until pastry is golden brown, about 45 minutes. Cool 10 minutes.
  • Remove pan sides from tart. Transfer to platter. Cut into wedges and serve.
