Time 1h30m

Number Of Ingredients 9

1 tablespoon butter
3 shallots, minced
3 bunches flat-leaf spinach, thick stems removed and leaves roughly chopped
Coarse salt and ground pepper

CHEDDAR-SWISS SPINACH QUICHE

Cheddar-Swiss Spinach Quiche image

I got this recipe a few years back on mrbreakfast.com and have been making it since. The recipe makes two pies so I will often freeze one for later or take one to work with me. I have reduced the amount of cheese considerably and also mix up the recipe a bit by using whatever I have on hand. Serving size is for one quarter of a pie. Enjoy!

Provided by Betty Crocker Kitchens

Time 1h5m

Yield 6

Number Of Ingredients 12

1/2 cup all-purpose flour
1/2 cup whole wheat flour
1/4 teaspoon salt
1/4 cup butter or margarine
3 to 4 tablespoons cold water
1/2 cup shredded reduced-fat sharp Cheddar cheese (2 oz)
1 tablespoon all-purpose flour
4 eggs, slightly beaten
1 1/2 cups milk
1/2 teaspoon salt
1 cup firmly packed fresh spinach leaves, coarsely chopped
1 small red bell pepper, chopped (1/2 cup)

Steps:

  • Heat oven to 375°F. In medium bowl, mix 1/2 cup all-purpose flour, the whole wheat flour and 1/4 teaspoon salt. Cut in butter, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until mixture looks like small crumbs. Sprinkle with water, 1 tablespoon at a time, tossing with fork just until flour is moistened. Shape into ball; flatten slightly.
  • On floured surface, roll dough into 12-inch round. Fold dough into fourths; place in 9-inch glass pie plate. Unfold and ease into pie plate, pressing firmly against bottom and side; crimp edge. Trim overhanging edge of pastry 1 inch from rim of pie plate. Fold and roll pastry under, even with plate; flute.
  • In large bowl, mix cheese and 1 tablespoon flour. Stir in eggs, milk and 1/2 teaspoon salt until well blended. Stir in spinach and bell pepper. Pour into pie crust.
  • Bake 15 minutes. Cover edge of crust with strip of foil to keep crust from overbrowning. Bake 15 to 20 minutes longer or until knife inserted in center comes out clean. Let stand 10 minutes before serving.

Tips:

  • For a richer quiche, use a combination of heavy cream and milk.
  • To prevent the quiche from curdling, whisk the eggs and cream together until well combined before adding the cheese.
  • For a crispy crust, pre-bake the pie crust before filling it.
  • If you don't have a pie crust, you can use a store-bought puff pastry sheet.
  • For a vegetarian quiche, omit the bacon.
  • For a different flavor profile, try using different types of cheese, such as Gruyère, cheddar, or Parmesan.
  • For a more substantial quiche, add cooked vegetables, such as broccoli, bell peppers, or artichoke hearts.
  • Serve the quiche warm or at room temperature.

Conclusion:

Whether you're a quiche aficionado or a novice cook, these recipes are sure to please. With their rich, creamy fillings and flaky crusts, quiches are a versatile dish that can be enjoyed for breakfast, lunch, or dinner.
