Time 1h30m

Yield 8

Number Of Ingredients 15

2 slices pumpernickel bread
1 pound ground chuck
1 pound ground pork
1 egg
½ cup finely chopped sweet onion
⅓ cup petite-cut diced tomatoes with sweet onions, drained and juice reserved
¼ cup finely chopped green pepper
1 tablespoon onion powder
½ teaspoon garlic salt
½ teaspoon ground black pepper
2 dashes Worcestershire sauce
2 dashes soy sauce
6 slices deli-sliced Swiss cheese
1 (4.5 ounce) can sliced mushrooms, drained
½ cup bottled sweet chili sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan. Tear the pumpernickel into pieces, and place into the work bowl of a food processor. Pulse several times to chop the bread into crumbs.
  • Lightly mix the pumpernickel crumbs, ground chuck, ground pork, egg, onion, diced tomatoes, 1/4 cup of the reserved juice from the tomatoes, green pepper, onion powder, garlic salt, black pepper, Worcestershire sauce, and soy sauce together in a bowl until the mixture is very well combined. Do not over mix, or the meat loaf will be tough.
  • Place half the meat mixture into the bottom of the prepared loaf pan, and gently press to smooth the top. Place 3 slices of Swiss cheese over the meat mixture, and spread the sliced mushrooms evenly over the cheese. Top the mushrooms with the remaining 3 slices of Swiss cheese, and spread the rest of the meat mixture in an even layer over the cheese. Press the top gently to smooth.
  • Bake the meatloaf in the preheated oven for 45 minutes, then remove from oven and spread with the chili sauce in an even layer. Return the meatloaf to the oven and bake until the juices run clear and the chili sauce has thickened into a glaze, about 15 more minutes. Let the meatloaf stand for 10 minutes before slicing.

Provided by Milloni Merchant

Categories     Appetizers

Yield 1 serving

Number Of Ingredients 17

1 slice american cheese
1 slice swiss cheese
2 portobello mushrooms, de-stemmed
½ cup bread crumbs
1 egg, beaten
½ cup flour
vegetable oil, for deep frying
2 tablespoons mayonnaise
1 tablespoon ketchup
1 teaspoon worcestershire sauce
1 teaspoon garlic salt
¼ tablespoon hot chili sauce
lettuce
tomato, sliced
onion, sliced
pickle, sliced, optional
burger bun

Steps:

  • Line a plate with two paper towels. Place two small portobello mushroom caps on the paper towels, then cover with two more paper towels. Top with another plate.
  • Meanwhile, in a small bowl, mix together mayonnaise, ketchup, worcestershire sauce, garlic salt, and hot chili sauce.
  • Place a slice of Swiss cheese down on a counter top, then place a slice of American cheese on top, folding the corners of the American cheese in towards the center. Do the same with Swiss cheese, forming a ball shape.
  • Place the cheese ball on one mushroom cap and then sandwich the other on top of it, pressing down to make the mushroom edges touch. Take a piece of clear plastic wrap and wrap it around the mushroom burger, twisting the sides like a piece of candy to release all of the air. Tuck the plastic wrap under the mushroom and refrigerate for 10-15 minutes.
  • Put the egg, flour, and bread crumbs into 3 separate bowls.
  • Remove plastic and coat mushroom burger in flour, egg, then bread crumbs. Dip in egg wash and bread crumbs one more time.
  • Heat vegetable oil in a large pan until it is 375ºF (190ºC) and fry mushroom burger for 1-2 minutes or until golden brown.
  • Remove burger onto paper towel to drain excess oil and let cool 1-2 minutes.
  • Assemble burger, spread special sauce on buns.

Tips:

  • For a richer flavor, use a combination of Swiss and Gruyère cheese.
  • To make the bread ahead of time, prepare the dough and let it rise according to the recipe. Then, shape the dough into a loaf and place it in a greased loaf pan. Cover the pan with plastic wrap and refrigerate the bread overnight. In the morning, let the bread come to room temperature for about an hour before baking.
  • If you don't have a bread machine, you can make the dough by hand. In a large bowl, combine the warm water, sugar, and yeast. Let stand for 5 minutes, until the yeast is foamy. Add the butter, salt, and flour and stir until a dough forms. Turn the dough out onto a floured surface and knead for 5-7 minutes, until the dough is smooth and elastic.
  • To make the mushroom filling, use a variety of mushrooms, such as cremini, shiitake, and oyster mushrooms. Sauté the mushrooms in butter until they are tender and browned.
  • For a cheesy, gooey filling, add a handful of grated Parmesan cheese to the mushroom filling.
  • If you don't have a loaf pan, you can bake the bread in a greased 9x13 inch baking dish.

Conclusion:

Swiss Cheese Mushroom Bread is a delicious and easy-to-make bread that is perfect for any occasion. It is a great way to use up leftover mushrooms, and it is also a great bread to serve with soup or salad. With its soft, fluffy texture and cheesy, mushroomy filling, this bread is sure to be a hit with everyone who tries it.
