Time 35m

Yield 16 pancakes

Number Of Ingredients 11

1 (3 ounce) package cream cheese
2 eggs
2 tablespoons flour
4 cups peeled shredded potatoes
1/4 cup shredded swiss cheese
2 tablespoons grated onions
1/4 teaspoon salt
1/8 teaspoon pepper
1 dash cayenne pepper
3 tablespoons butter
3 tablespoons vegetable oil

Steps:

  • In a mixing bowl, beat cream cheese until nice and smooth.
  • Add eggs one at a time beating well after each addition.
  • Add flour and continue to mix well.
  • Stir in potatoes, swiss cheese, onion, salt, pepper and cayenne pepper.
  • In a large skillet heat butter and oil over a medium heat.
  • Drop batter by 1/4 cupfuls and press lightly to flatten.
  • Fry until golden and crisp, about 5 minutes on each side.

Tips:

  • For crispy potato pancakes, use a combination of grated raw and cooked potatoes. The raw potatoes provide structure, while the cooked potatoes add moisture and flavor.
  • Don't overmix the batter. Overmixing will make the pancakes tough.
  • Heat a non-stick skillet over medium-high heat. Add a little oil or butter to prevent the pancakes from sticking.
  • Cook the pancakes in batches. Don't overcrowd the skillet, or the pancakes will not cook evenly.
  • Flip the pancakes once they are golden brown on the bottom. Cook for an additional 1-2 minutes, or until the pancakes are cooked through.
  • Serve the pancakes immediately with your favorite toppings. Some popular toppings include sour cream, applesauce, or maple syrup.

Conclusion:

Swiss cheese potato pancakes are a delicious and versatile dish that can be served for breakfast, lunch, or dinner. They are easy to make and can be customized to your liking.
