ASPARAGUS SALAD WITH HARD-BOILED EGGS
A classic Italian salad, there are many versions of this dish. Sometimes the asparagus are not cut up, just topped with chopped hard-boiled eggs and vinaigrette. I like to cut them into pieces and toss everything together.

POACHED EGGS AND ASPARAGUS
This is a family recipe my mother made for me growing up. My grandfather had several acres of asparagus on his farm, and this was something they served during the spring and fall whenever asparagus was plentiful. This recipe is also good served with warm breakfast ham or Canadian bacon--just put in on the toast before the egg. Top this masterpiece with another slice of toast to make a sandwich and eat it on the go.

Tips:
- Choose the freshest asparagus. Look for spears that are bright green and crisp. Avoid spears that are wilted or have brown tips.
- Steam the asparagus until just tender. This will help preserve its flavor and texture.
- Use high-quality Swiss cheese. A good Swiss cheese will have a nutty, buttery flavor. Avoid pre-packaged shredded cheese, as it is often lower quality.
- Hard-boil the eggs until they are just set. This will prevent them from becoming overcooked and rubbery.
- Use a food processor to chop the eggs and asparagus. This will make the salad smooth and creamy.
- Add mayonnaise, sour cream, and mustard to taste. The amount of these ingredients you add will depend on your personal preference.
- Season the salad with salt and pepper. Start with a small amount and add more to taste.
- Serve the salad immediately or chill it for later. It is best served chilled, but it can also be enjoyed at room temperature.
