Tips:

Choose the right cut of meat: Chuck roast, rump roast, and brisket are all good choices for Swiss pot roast. These cuts are tough, but they become tender when cooked slowly. Brown the meat before braising: Browning the meat adds flavor and helps to prevent it from becoming dry. Use a variety of vegetables: Carrots, potatoes, onions, and celery are all classic Swiss pot roast vegetables. Feel free to add other vegetables that you like, such as parsnips, turnips, or rutabagas. Don't overcook the meat: Swiss pot roast should be cooked until it is tender, but not so long that it becomes dry. The best way to tell if the meat is done is to insert a meat thermometer into the thickest part of the roast. The internal temperature should be 165 degrees Fahrenheit. Serve with a hearty side dish: Swiss pot roast is a great meal to serve with mashed potatoes, egg noodles, or rice.
