This classic Swiss steak recipe is true comfort food. The steaks are browned and then slowly baked to perfection in a tomato sauce.

SWISS STEAK BH&G YEAR 1937
This intro is from the 1937 recipe. Our first swiss steak recipe appeared in 1930 and was seasoned only with salt, pepper, onion and mustard. Over, the years, the ingredients have changed to include more flavorful items. With todays recipe you can take your choice of of range-top or oven method. This is a very tasty recipe. Sometimes going back to the basics is just the best! Recipe says to serve over rice or egg noodles.

Steps:
- Trim fat from meat. Cut into 4 serving size pieces.
- Combine the flour, salt and pepper. With the notched side of a meat mallot, pound flour mixture into meat, both sides.
- In a large skillet brown meat on both sides in hot oil. Drain off fat.
- Add undrained tomatoes, onion, celery, carrot and thyme. Bring to boil, reduce heat. Cover and simmer about 1 1/4 hours or until meat is tender.
- Skim off any fat.
- Serve over rice or noodles.
- Oven directions:
- Prepare and brown meat in skillet, as above. Transfer meat to a 2 qt baking dish.
- In the same skillet combine undrained tomatoes, onion, celery, carrot and thyme. Bring to a full boil, scraping up any browned bits.
- Pour over meat.
- Cover and bake in a 350 degree oven about 1 hour until tender. Serve over rice or noodles.
MY MOM'S SWISS STEAK
This is so easy and all done in one pot! It is delicious and everyone including kids will love it! This recipe is tried and true, impossible to fail! It can also be doubled or tripled without problems, but lower the heat on the second and third batch when browning, as not to burn.

- Heat oil in a large Dutch oven over medium-high heat. Place steaks into the pot one at a time, quickly browning on each side. Remove steaks, and set aside. Add the onion to the pot, and cook over medium-low heat until wilted, about 3 minutes. Return the steaks to the pot, and add the tomatoes, mushrooms, celery and green pepper. Season with oregano and add the bay leaf.
- Cover the pot, and cook over medium-low heat for about 1 1/2 hours, or until meat is fork tender. If you wish to thicken the gravy, remove the meat to a plate. Stir together the cornstarch and water; stir into the pan juices. Let simmer for about 2 minutes to thicken. Return the beef to the pot.

SWISS STEAK CASSEROLE
Swiss steak is made easy by using beef cubes, combining the ingredients in a casserole and popping it in the oven!

- Heat oven to 350°F. In medium bowl, mix flour, salt, paprika and pepper. Add steak; toss to coat. In 12-inch skillet, heat 1 tablespoon of the oil over medium-high heat. Add steak, reserving remaining flour mixture; brown steak on all sides. Spoon into ungreased 2 1/2-quart casserole.
- To same skillet, add remaining 1 tablespoon oil, the mushrooms, onions and garlic. Cook 2 to 3 minutes, stirring constantly, until browned; add to casserole. Add carrots, tomatoes and reserved flour mixture; mix well.
- Cover casserole. Bake 1 hour 30 minutes to 1 hour 45 minutes or until meat and vegetables are fork-tender.

EASY AND QUICK SWISS STEAK
This was my favorite growing up. I was amazed when I was older and asked my mom for the recipe how EASY it is! A small amount of prep. time, a day in the slow cooker, and you'll be amazed! It sounds too simple to be good... TRUST me! This gets RAVE reviews when we make it! The amount of vegetables is only an estimate. Use as many or as few as you choose. When it's done, you will have a yummy gravy, and will have to carefully dig for the steak pieces.

- Heat the oil in a skillet over medium heat. In a bowl, mix the flour, salt and pepper, and paprika. Dredge the steaks in the flour mixture, and place in the skillet. Brown steaks on both sides, and remove from heat.
- In a slow cooker, alternate layers of steak, green bell pepper, red bell pepper, onion, and tomatoes.
- Cover, and cook 6 to 8 hours on Low, until steaks are very tender.
