Posted for the Zaar World Tour-Africa! Tabil is said to have been brought to Tunisia in 1492. Tabil(pronounced table) means seasoning in Tunisian. In Africa, tabil is pounded in a mortar and then dried in the sun and is often used in cooking beef or veal.

2 large garlic cloves, peeled, chopped and dried in the open air for 2 days (or 2 teaspoons garlic powder)
1/4 cup coriander seed
1 tablespoon caraway seed
2 teaspoons cayenne pepper

Steps:

  • In a mortar, pound the garlic with the coriander, caraway, and cayenne until it is smooth. Store in the refrigerator or freezer. Keep in the refrigerator if using fresh garlic for up to two months or indefinitely if using powdered garlic, although the pungency will decline as time goes by.
  • Makes about 1/4 cup.

Tabil is used to season & enhance many Tunisian dishes. In fact, Tabil means seasoning (it originally referred to the coriander which is the key ingredient in Tabil!) Tabil is often used in conjunction with harissa & added to stews. You can use it as a rub or to season cooked vegetable salads or in dolma stuffing.

1/2 cup coriander seed
4 tablespoons fresh garlic, chopped
2 tablespoons caraway seeds
2 tablespoons crushed red pepper flakes
1 teaspoon ras el hanout spice mix

Steps:

  • Combine coriander seeds, garlic, caraway seeds, crushed red pepper flakes and grindin a spice / coffee grider or in a mortar & pestle.
  • Spread out onto a baking tray and dry in a low oven (200°F) for about 1 hour.
  • Cool, grind again as fine as possible. Add the ras el hanout & store in an airtight jar in a cool, dark place for up to 4 months.
