Make the Original Grilled Stuffed Burrito at home like the Burritos Taco Bell used to make back in 2005! The true Grilled Stuft Burrito with baja sauce not the later XXL Burrito. I'm bringing back my favorite Taco Bell menu item (and it's so EASY to make!) All you need is flour tortillas, rice, refried beans, pico de gallo, baja sauce, and cheese!

6 flour tortillas ((10-inch))
2 cups cooked rice
1 1/2 cups pico de gallo
5 oz Taco Bell's Baja Sauce ((found in most Grocery Stores))
2 cups Mexican cheese ((shredded))
15 oz refried beans ((heated per can instructions) )

Steps:

  • Top each tortilla with 1/3 cup of beans, 1/2 cup rice, 1/3 cup of pico de gallo and cheese.
  • Drizzle with 2 Tbsp of Baja sauce and roll up tortilla tucking in the sides.
  • Grill in preheated griddle press at 425°F for 24-30 seconds.

1/2 cup water
1 teaspoon soy sauce
1 teaspoon salt
1 teaspoon brown sugar
1/2 teaspoon onion powder
1/4 teaspoon liquid smoke flavoring
1/4 teaspoon black pepper
1/4 teaspoon chili powder
2 boneless chicken breasts
1 cup cooked rice
1/2 cup enchilada sauce
1/2 teaspoon salt
4 (12 inch) flour tortillas
1/3 cup shredded cheddar cheese
1/3 cup shredded monterey jack cheese
green onion (sliced)

Steps:

  • In a small bowl combine marinade ingredients. Pour the mixture over the chicken breasts and Marinade overnight.
  • Cook the chicken on your barbecue or indoor grill over med-high heat for 5-6 minute per side, or until done. Slice the chicken into bite-size chunks.
  • Add the enchilada sauce to the rice. Put on the rice over low heat, uncovered, and cook until hot.
  • Heat the tortillas in a steamer, or wrap them in moist towels and heat on high for 25-30 sec. in the microwave.
  • Build the burrito by spreading 1/4 of the chicken down the middle of one of the tortillas. Leave room at the end for folding. Spread 1/4 of the rice over the chicken. Sprinkle a heaping tablespoon of each of the cheeses over the rice. Sprinkle sliced green onions to taste. Fold up.
  • You may want to heat up each burrito in the microwave for 20-30 sec. to help the cheese melt.
  • NOTES : I also spoon a little more enchilada sauce over chicken mixture.

I've search high and low on the internet. I've dug deep. I've looked in every recipe site I could find. Yet somehow, no one on the internet has posted a recipe for Taco Bell's chicken burritos. You know, the ones with the avocado ranch sauce. The most delicious item on the Taco Bell menu. Somehow, this great oversight has gone unnoticed by anyone but me. No longer. Here is the recipe. (Note: very few of the amounts are exact. I'm estimating. I didn't measure. Usually if you estimate with this blend it will be okay).

3 chicken breasts
1 tablespoon paprika
1 tablespoon cumin
1/2 tablespoon chili powder
1 teaspoon cayenne pepper
2 teaspoons garlic powder
1 teaspoon salt
6 ounces enchilada sauce
2 cups uncooked medium grain rice
4 cups water
1 avocado
1 lime
salt
1/3 cup ranch dressing, depending on the size of your avocado
1 cup grated cheddar cheese, to taste
10 -16 tortillas (varies by size)

Steps:

  • Pound out the chicken breasts until they're thin and flat. Sprinkle most of the spice mixture evenly over the chicken breasts. Make sure they're well-seasoned.
  • Meanwhile, cook the rice in a pot or rice cooker (the latter produces better results). Once it's done, mix it with the remainder of the spices and the enchilada sauce.
  • Grill the chicken; allow to cool and slice.
  • Mash the avocado and mash in the ranch dressing, salt, and lime juice.
  • Warm however many tortillas you wish to make burritos with.
  • To construct a burrito, lay out a tortilla and spoon on some of the avocado sauce. Spread it over the middle of the tortilla. Then spoon on a few tablespoons of the rice, followed by a sprinkling of cheddar cheese. Place the chicken on top of the cheese, add more avocado sauce to taste, and roll up the burrito. (Lime juice and salsa verde are also wonderful on this if you wish.).
  • Microwave the final burrito for about 20 seconds just to make sure everything is warm. Enjoy! They taste incredibly like Taco Bell's.

1 onion, chopped
2 bell peppers, seeded and chopped
1 jalapeño, seeded and chopped
4 cloves garlic
salt, to taste
pepper, to taste
4 boneless, skinless chicken breasts
1 tablespoon paprika
1 tablespoon dried oregano
1 tablespoon cumin
1 tablespoon garlic powder
15 oz refried bean, 1 can
3 tomatoes, seeded, chopped
15 oz black beans, 1 can, drained and rinsed
15 oz tomato sauce, 1 can
3 chipotle peppers in adobo sauce
3 tablespoons tomato paste
¼ cup lime juice
2 cups cotija cheese, divided

Steps:

  • Preheat oven to 400°F (200°C).
  • Add a tablespoon of olive oil to a skillet over medium-high heat. Once the oil begins to shimmer, add the onion, bell peppers, jalapenos, garlic, salt, and pepper. Cook, stirring occasionally, until golden brown and caramelized, about 15 minutes. Set aside to cool
  • Place 4 chicken breasts in a bowl near a wide work surface.
  • Combine the salt, pepper, paprika, oregano, cumin, garlic powder in a small bowl, and mix together with a fork.
  • Pour half of the spice mixture onto the chicken, set the other half aside to use later.
  • Rub all the spices onto the chicken until completely coated.
  • To pound out the chicken, first take a chicken breast and butterfly it by slicing half way into it to open it like a book, making sure not to slice it all the way through. Cover the breast with parchment paper or plastic wrap. Gently pound the meat with a mallet or rolling pin until it is evenly flattened, about ¼ inch (6 mm) in thickness.
  • Onto each pounded chicken breast, rub on about 2 tablespoons refried beans, 1 tablespoon chopped tomatoes, 1 tablespoon cotija cheese, and 1 tablespoon cooked black beans. Make sure to not overfill the pounded chicken.
  • Carefully roll the chicken breast until the ends overlap and then place the chicken into a greased baking dish.
  • Bake for 20 minutes or until the chicken is fully opaque and reaches at least 165°F (75°C).
  • For the chipotle sauce, add the tomato sauce, chipotle peppers, tomato paste, lime juice, and the remaining spice mixture to a blender and puree until smooth.
  • Pour the sauce over the cooked chicken roll ups and sprinkle with more cotija cheese.
  • Broil for 5 minutes or until the sauce bubbles and the cheese melts and browns slightly.
  • Serve with cooked rice, avocado, sour cream, and/or pico de gallo.
