Number Of Ingredients 8

1 egg
1/2 cup sour cream
1/3 cup salsa
2 to 4 TBSP taco seasoning
1 cup crushed tortilla chips
1/2 cup shredded cheddar cheese
2 pounds lean ground beef
Optional toppings: sour cream, salsa, shredded cheddar cheese, shredded lettuce, sliced ripe olives

Steps:

  • In a large bowl, combine the first six ingredients. Crumble beef over mixture and mix well. Pat into the bottom of a slow cooker. Cover and cook on low for 8 hours or until a meat thermometer reads 160 degrees. Top with sour cream, salsa, cheese, lettuce and olives if desired.

Tips:

  • Use a variety of ground meats. This recipe calls for ground beef, but you can also use ground turkey, chicken, or pork.
  • Add your favorite taco seasoning. This recipe uses a simple blend of chili powder, cumin, and garlic powder, but you can add other spices to taste, such as paprika, oregano, or cayenne pepper.
  • Don't overmix the meatloaf mixture. Overmixing can make the meatloaf tough. Just mix the ingredients until they are combined.
  • Use a loaf pan that is the right size. A 9x5 inch loaf pan is the perfect size for this recipe. If you use a larger loaf pan, the meatloaf will be too thin and may not cook evenly.
  • Cook the meatloaf at the right temperature. The meatloaf should be cooked at 350°F for about 1 hour, or until a meat thermometer inserted into the center reads 160°F.
  • Let the meatloaf rest before slicing. Let the meatloaf rest for about 10 minutes before slicing. This will help the juices redistribute throughout the meatloaf, making it more moist and flavorful.

Conclusion:

This taco meatloaf is a delicious, easy-to-make meal that is perfect for busy weeknights. It is a great way to use up leftover taco meat, and it is sure to be a hit with the whole family. So next time you are looking for a quick and easy meal, give this taco meatloaf a try!
