DRY TACO SEASONING MIX
I never buy taco seasoning mix, since this is very easy to mix up. I usually have all of the ingredients on hand, so I make a big batch and store it in an airtight container until taco night. Also good for enchiladas, burritos, and dips!

NO-SALT TACO SEASONING MIX
From 500 Low Sodium Recipes by Dick Logue. I haven't tried this one yet, but Dick Logue has some other really good salt-free seasoning recipes, so I'm posting this for future use. (The book says it makes 6 servings of 1/2 tsp. each. In practical terms, that works out to about 3 tbsp. per pound of ground beef.)

Steps:
- Heat oven for taco shells. Start browning meat. Mix taco seasoning dry ingredients. While meat is browning, grate cheese and chop tomatoes; prep lettuce; get out condiments that you want to use. Watch for meat to get about 1/2 browned. When meat is partially browned add taco seasoning mix and continue until fully browned. After browned completely, add 1/2 to 1 cup water and the 2 tbsp tomato paste and cook down on low to blend flavors. It is about now that you would put your taco shells into a preheated oven. The cook times vary: 3 - 9 minutes depending on brand. Finish prepping condiments and toppings while meat mixture simmers down to almost no liquid but is still moist. Used it with 1 lb ground lean beef, corn taco shells, cheese, salsa, avocados, tomatoes. May serve with sour cream..

CHICKEN TACO SEASONING MIX, SCD COMPLIANT
We had a favorite seasoning from Penzeys, called Arizona Dreaming, that was great for seasoning chicken for chicken tacos, or sprinkling onto any Mexican or Southwest style dish. My kid's new medical Specific Carbohydrate Diet for IBD, does not allow some of the ingredients in it, so I went about coming up with an SCD...

Steps:
- 1. Mix together & store in an airtight glass container. Great on grilled chicken, left over rotisserie chicken, shredded chicken, or ground chicken/turkey, or even black beans, for tacos. Use as much as tastes right. Add salt to taste, if desired. Also great sprinkled on just about any Mexican style dish that needs a bit of zing. Guacamole, in a burrito, or quesadilla, etc.
- 2. Note: Citric Acid is the type of acid in citrus fruit, that comes in little crystals like salt. It is sometimes called sour salt, because it looks like salt, though it contains no salt. It is one way to increase flavor without adding salt, if you are on a low sodium diet. You can buy it easily online, or sometimes locally. It makes this spice mix a convenient time saver. But you can always squeeze fresh lime juice into whatever you are making, instead, if you don't mind the extra liquid.

EXCELLENT TACO SEASONING MIX
Homemade for half the price of the off-the-shelf stuff. Just made this for dinner, it tasted great albeit a bit spicy (just how I like it). The cornstarch is to make it a thick consistency, you can add more or less depending on how you like it. Feel free to leave the salt out for a sodium free alternative, it'll still taste great.
