Time 1h

Yield 4 servings

Number Of Ingredients 12

2 tablespoons olive oil
4 bone-in, skin-on chicken breast halves
1 1/4 teaspoons kosher salt
1 shallot, chopped
1 preserved lemon, inside discarded, skin thinly sliced
1/2 cup pitted mixed marinated olives, halved
1/2 cup sun-dried tomatoes in oil, drained and chopped
1 cup white wine
1 cup low-sodium chicken broth
4 sprigs oregano
2 tablespoons chopped Italian parsley
Chive blossoms, for garnish, optional

Steps:

  • Heat the oil a medium straight-sided skillet over medium-high heat. Dry the chicken breasts well and sprinkle evenly with the salt. Place the breasts skin-side down in the hot pan and cook undisturbed until deep golden brown, about 6 minutes. Using tongs, flip the chicken to the bone side and continue to cook for another 5 minutes. Remove to a plate while you build the sauce.
  • In the same pan, add the shallots and sweat, stirring occasionally, for a minute. Add the preserved lemon, olives and sun-dried tomatoes and stir to combine. Deglaze with the white wine, scraping up the brown bits from the bottom of the pan with a wooden spoon. Simmer for 3 minutes to reduce slightly. Add the chicken broth and return to a simmer. Add the oregano and the chicken back to the sauce. Spoon some of the liquid over the chicken. Cover the pan and simmer gently until an instant-read thermometer registers 160 degrees F, about 25 minutes. Allow the chicken to rest in the sauce for 10 minutes. Stir in the parsley.
  • Serve the chicken with a generous helping of the sauce and sprinkled with chive blossoms if using.

Categories     main-dish

Yield 4 servings

Number Of Ingredients 15

6 cloves garlic, peeled and finely chopped
1 teaspoon ground cumin
1 teaspoon ground ginger
1/2 teaspoon sweet paprika
1 tablespoon kosher or sea salt
1/2 teaspoon freshly ground black pepper
1 large Spanish onion, grated (about 1 cup)
2 tablespoons canola, grapeseed or olive oil (not a heavy olive oil)
1 to 2 preserved lemons, depending on size
8 chicken thighs, with bone and skin
Stems from the parsley and cilantro, tied with twine
1/4 teaspoon powdered saffron or 1/4 teaspoon powdered turmeric and 4 strands saffron
1 cup pitted green Moroccan or Greek olives
1/2 bunch Italian parsley, about 1/4 cup chopped
1/2 bunch cilantro, about 1/4 cup chopped

Steps:

  • In a large bowl, mix the garlic, cumin, ginger, paprika, salt and pepper, 1/2 cup grated onion, and the oil.
  • Rinse the preserved lemons, and remove the pulp. RESERVE the lemon peel for later use.
  • Add the lemon pulp to the mixing bowl. Add the chicken. Mix everything together and place in a large plastic bag to marinate overnight in the refrigerator. (Twenty-four hours really gives the chicken the best flavor.)
  • In a large Dutch oven or casserole, place the chicken and marinade; add the stems of the parsley and cilantro, the rest of the grated onion, the powdered saffron and 1 1/2 cups water. Bring to a boil over high heat, turn down to a simmer and cook, partially covered, for 30 minutes.
  • Remove the cover, stir the chicken and continue to simmer for another 15 minutes or until the chicken is tender.
  • Remove the chicken to a serving dish and cover with foil to keep warm. Keep sauce on stove and begin to reduce.
  • Slice the preserved lemon peel into thin slices and add to the sauce along with the olives, parsley and cilantro. Reduce until the sauce is just a little thick. This shouldn't take more than 5 minutes at most.
  • Uncover the chicken and remove the skin from the chicken. (It doesn't look pretty and who needs the extra fat.) Pour sauce over chicken and serve.

TAJINE MSIR ZEETOON - MOROCCAN CHICKEN WITH LEMONS

Tajine Msir Zeetoon - Moroccan Chicken With Lemons image

Moroccan Chicken with lemons and three types of olives. If you like sour/lemon flavours then this dish will be suitable for you. This dish is very easy and preparation time is only 10 mins and 30 mins to marinate. The recipe requires 1 chicken cut into serving pieces but I used 8 chicken pieces (thighs & drumsticks) with skin off. I don't normally have fresh coriander regularly available but I used 1 teaspoon of coriander powdered. It comes from a book called 'The Olive Oil Cookbook' by Marlena Spieler.

CHICKEN TAJINE WITH PRESERVED LEMON AND OLIVES

Chicken Tajine With Preserved Lemon and Olives image

Chicken Tajine with preserved lemon is known to be Morocco's second most popular dish after couscous and considered to be the national dish. Tajine is a pot which is made from heavy clay that has been glazed. The shape of the pot is designed to promote the return of all condensate to the bottom. The base of the pot is flat and circular with low sides, and the lid is a shape of a large dome. This recipe was shown on SBS's Food Safari by chef's Hassan M'Souli. I served it with Recipe #221217. Preparation time does not included overnight marinating time.

Tips for Making Moroccan Chicken with Lemons (Tajine Msir Zeetoon)

  • Selecting the Right Ingredients: Start with high-quality, organic chicken pieces for the best flavor and texture. Choose juicy lemons and fresh green olives for a tangy and vibrant taste.
  • Marinating the Chicken: Allow ample time for the chicken to marinate in the flavorful mixture of lemon juice, garlic, coriander, cumin, paprika, and turmeric. This step enhances the flavors and tenderizes the chicken.
  • Caramelizing the Onions: Take your time to caramelize the onions until they are golden brown. This step adds depth and sweetness to the dish.
  • Using a Well-Seasoned Tagine: If you have a traditional tagine, make sure it is properly seasoned before using. This helps distribute heat evenly and prevents food from sticking.
  • Controlling the Heat: Tajine cooking relies on low and gentle heat. Maintain a low simmer to allow the flavors to develop and blend harmoniously.
  • Adding the Olives and Preserved Lemons: Wait until the chicken is almost fully cooked before adding the green olives and preserved lemons. This ensures that they retain their flavor and texture.
  • Garnishing with Fresh Herbs: Finish the dish with a sprinkle of fresh cilantro and parsley for an extra burst of color and flavor.
  • Conclusion

Moroccan Chicken with Lemons (Tajine Msir Zeetoon) is a delightful and flavorful dish that combines the vibrant flavors of Moroccan cuisine.
