Mandarin Orange Salad image

Very nice light salad with a wonderful mix of flavors that all compliment each other. I like to side this salad with pork or chicken

Number Of Ingredients 15

DRESSING INGREDIENTS:
1/2 c oil (your choice but i have switched to coconut oil)
1/4 c sugar
1/4 c balsamic vinegar
1 tsp each of salt and pepper
1 tsp dry mustard
1 tsp worcestershire sauce
1/2 medium red onion, diced small
2 tsp dried parsley
SALAD INGREDIENTS:
1 bag(s) baby spinach
1 bag(s) mixed greens (mesculin)
2 can(s) mandarin oranges
1 small cucumber, sliced thin and halved
1/2 medium red onion, sliced thin

Steps:

  • 1. DRESSING: Mix all dressing ingredients and let stand in the refrigerator for AT LEAST 4 hours, but preferably overnight. (The longer that it stands the better the flavor!)
  • 2. SALAD: NO MORE than an hour or so before serving, Mix all greens ingredients. JUST BEFORE SERVING add onions (DO NOT take a short cut and place onions in the salad mix and let sit, you will regret it), add dressing and toss. ENJOY! YUMMMMMMmmmmm!
