3 tablespoons unsalted butter, room temperature
3 tablespoons mayonnaise
6 ounces thinly sliced Taleggio
4 (1/4-inch-thick) large heirloom or beefsteak tomato slices
Kosher salt and freshly ground pepper
8 large basil leaves

Steps:

  • Arrange bread in a single layer on a clean work surface. Stir together butter and mayonnaise. Spread mixture evenly onto one side of every slice (1 scant tablespoon per slice).
  • Heat a large skillet, preferably cast iron, over medium. Flip over 4 slices on work surface (so they're plain-side up); divide Taleggio among them. Top each with a tomato slice; season generously with salt and pepper. Place 2 basil leaves on top of each. Carefully sandwich together.
  • Place sandwiches in skillet (in two batches, if needed). Reduce heat to medium-low; gently top sandwiches with a lid slightly smaller than skillet for even cooking. Cook, flipping once halfway through, until crisp and golden on both sides and cheese is melted, 7 to 9 minutes. Serve immediately.

1 1/4 cups flour, plus more for rolling
1/2 teaspoon salt
6 tablespoons cold butter, preferably high-fat
1 large egg yolk, beaten with 2 tablespoons ice water
1 tablespoon extra virgin olive oil
1 teaspoon cumin seeds
8 ounces shiitake mushrooms, sliced and stems discarded
1 tablespoon finely sliced shallots
Salt and ground white pepper
2 tablespoons creme fraiche
6 ounces taleggio, rind removed, sliced thin

Steps:

  • Heat oven to 400 degrees. Combine flour and salt in food processor. Pulse to combine. Dice butter, and add. Pulse until pebbly. Open lid, and sprinkle with egg yolk mixture. Pulse 10 or 12 times. If dough does not come together, sprinkle on a little more ice water and pulse again. Do not overwork.
  • Gather dough in a ball, flatten and roll out on floured board. Fit into an 8-or 9-inch tart pan. Prick bottom, line with parchment paper or foil, cover with pastry weights or dry beans and bake 10 minutes. Remove paper and weights. Bake about 10 minutes more, until pastry starts to color. Remove from oven. Reduce heat to 375 degrees.
  • While pastry bakes, heat oil in a 10-inch skillet. Add half the cumin seeds. When they pop, add mushrooms and shallots, and saute, stirring, until mushrooms start to brown. Season with salt and pepper.
  • Spread pastry with creme fraiche. Cover with mushrooms, and top with cheese slices. Scatter with remaining cumin. Bake in oven about 20 minutes, until cheese melts. Serve.

1 envelope (1 scant tablespoon) active dry yeast
Pinch of granulated sugar
1 1/2 cups warm water (110 degrees)
1/2 cup plus 2 tablespoons extra-virgin olive oil, plus more for brushing
2 tablespoons finely chopped fresh rosemary, plus 2 teaspoons leaves
4 cups all-purpose flour, plus more for dusting
1 1/2 teaspoons coarse salt
1/2 cup grated Parmesan cheese (about 1 1/2 ounces)
10 ounces Taleggio cheese, rind removed, thinly sliced
3/4 ounce fresh black truffle (optional)
Flaked sea salt, for sprinkling

Steps:

  • Place oven rack in middle position, and place a pizza stone on rack. Preheat oven to 450 degrees. Combine yeast, sugar, and water in the bowl of a standing mixer fitted with the dough hook attachment. Let stand until foamy, about 10 minutes. Stir until yeast and sugar have dissolved. Add 6 tablespoons oil, the chopped rosemary, flour, coarse salt, and Parmesan, and beat on medium speed until dough forms a ball, about 2 minutes.
  • On a lightly floured surface, knead dough until smooth and elastic. Lightly brush a medium bowl with oil. Place dough in bowl. Cover with a clean kitchen towel, and let rise in a warm place until doubled in size, about 1 hour.
  • Punch down dough, and turn out onto a lightly floured surface. Cut in half, cover, and let rest for 10 minutes.
  • On a lightly floured piece of parchment, roll 1 portion of dough into a 9-by-16-inch rectangle, about 1/4 inch thick. Brush with 2 tablespoons oil. Arrange half the Taleggio on top, and sprinkle with 1 teaspoon whole rosemary leaves. Slide parchment and dough onto an inverted baking sheet, and use the sheet to slide parchment and dough onto the preheated stone in oven.
  • Bake, rotating bread once, until crust is just golden and cheese is bubbling, 10 to 12 minutes. Transfer parchment and bread to a wire rack. Shave half the truffle over top if desired, and sprinkle with flaked sea salt. Repeat with remaining dough, 2 tablespoons oil, 1 teaspoon rosemary leaves, and Taleggio. Slice into wedges or squares, and serve warm or at room temperature.

1 (1-pound) loaf ciabatta bread (or 8 slices country bread)
1/4 cup olive oil
8 ounces Taleggio cheese or brie, sliced
2 large pears, apples or peaches, cored and cut into 1/4-inch wedges
2 tablespoons honey
Pinch salt
Pinch freshly ground black pepper
3 ounces arugula or spinach

Steps:

  • Preheat the panini machine. Cut the ciabatta loaf into 4 equal pieces. Halve each piece horizontally to make 4 sandwiches. Brush the bread on both sides with olive oil and place the bottom-half of the bread slices in the panini machine in a single layer. Heat until golden, about 3 to 4 minutes. Continue with the remaining top slices of bread.
  • While the top slices of the bread are in the Panini machine, begin forming the sandwiches. Divide the cheese among the warm bread. Cover the cheese with slices of fruit. Drizzle the fruit with honey. Sprinkle with salt and pepper. Top with a handful of arugula. Place the warmed top half of the bread over the arugula and return the competed sandwich to the panini machine for 1 to 2 minutes more to finish melting the cheese. Remove from the panini machine. Cut the sandwiches in half and serve immediately.

1 clove garlic
1 whole clove
1 bay leaf
1 cup chicken stock
1 1/2 cups white wine
2 tablespoons cornstarch
2 teaspoons all-purpose flour
1 pound Taleggio cheese with rind, diced
3/4 pound white Cheddar, grated
3/4 pound Gruyere, grated
2 teaspoons vodka
Dipper suggestions: baguette cut into bite-size pieces, cauliflower florets, grilled chicken cut into bite-size pieces, cherry tomatoes

Steps:

  • Rub the bottom and sides of a medium heavy pot with the garlic. To the pot, add the garlic, clove, bay leaf, stock and 1 cup wine. Bring to a simmer over medium heat.
  • In a small bowl, whisk together the cornstarch, flour and remaining 1/2 cup wine. Whisk the slurry into the pot and simmer until slightly thickened, about 2 minutes.
  • Reduce the heat to low and add the cheeses, working in 4 batches, making sure each batch is incorporated before moving onto the next. Whisk in the vodka. Remove the bay leaf.
  • Transfer to a fondue pot and serve with the baguette pieces, cauliflower florets, chicken and cherry tomatoes.

300g white bread flour, plus extra for dusting
1 sachet easy-blend yeast
1 tbsp olive oil , plus a little extra
300g salad potatoes (no need to peel them)
200g baby spinach leaves
200g taleggio cheese (or vegetarian alternative), thinly sliced
few rosemary sprigs
4 tbsp freshly grated parmesan (or vegetarian alternative)

Steps:

  • Tip the flour and the yeast into a bowl and mix well. Stir in ½ tsp salt, then make a well in the centre and add 200ml hand-hot water and the oil and mix to a soft dough. Turn out onto a lightly floured surface and knead for 5 mins until the dough is smooth and silky. Return to the bowl, cover with a clean tea towel and leave to rise for 1 hr.
  • Meanwhile, boil the potatoes, then drain. Leave until cool enough to handle, then peel and cut into thin slices.
  • Put the spinach into a metal colander and pour over boiling water from a kettle to just wilt the leaves. Press out excess water using the edge of a saucer.
  • Knead the risen dough and roll out to line a 30 x 36cm shallow rectangular tin. Arrange the spinach over the pastry to within 2cm of the edges. Arrange the potatoes and Taleggio alternately over the top and scatter with rosemary. Sprinkle the Parmesan over the filling and the pastry edges and drizzle with a little olive oil. Leave to rise again for 20 mins. Heat oven to 200C/180C fan/gas 6. Bake for 20-25 mins until the pastry is golden and the topping melted and golden brown. Serve cut into squares.
