1 8 oz. package cream cheese, softened
1 stick margarine or butter (softened)
2 T. green olive juice
1 7 oz. jar green olives (cut up)
2 3.8 oz. small cans sliced black olives

Steps:

  • Drain 1 jar green olives into a bowl. Reserve 2 tablespoons of the green olive juice to add to the olive dip.
  • Remove olive juice.
  • Place 8 ounce softened cream cheese and 1 stick of margarine or butter in a bowl. Add the 2 tablespoons reserved green olive juice.
  • Put olive juice in cream cheese.
  • Mix until well combined.
  • Mix cream cheese.
  • In a bowl, place the drained jar of green olives.
  • Places green olives in bowl.
  • Chop the green olives. We used the Rada Food Chopper to easily chop our olives.
  • Chop green olives.
  • Add 2 small cans of sliced black olives to the green olives and continue to chop. Continue chopping until the olives are fully chopped.
  • Chop black and green olives.
  • Combine the olives with the cream cheese and mix until blended.
  • Blend cheese and olives.

1 pint (2 cups) mascarpone, at room temperature
3/4 cup grated Parmesan
3 to 4 tablespoons pitted hot pepper green olives, chopped fine*
Squeeze lemon juice
Red and green bell peppers, squared bottoms
Purple cabbage, ruffled leaves and hollowed out
Radicchio, ruffled leaves and hollowed out
Green cabbage, ruffled leaves and hollowed out

Icicle radishes

Cucumber spears

5 ounces green olives (with pimentos)
16 ounces cream cheese (2 packages)
1/2 cup mayonnaise
1 small onion

Steps:

  • In a food processor, blend the cream cheese and mayonnaise and a few thin slices of onion (to taste) until smooth. Thin the mixture to your liking by adding some of the juice from the olive jar.
