SALTY-SWEET SALMON WITH GINGER AND SPICY CUCUMBER SALAD

Salty-Sweet Salmon With Ginger and Spicy Cucumber Salad image

This 2006 recipe came to The Times by way of David Myers, the American chef and restaurateur, when Amanda Hesser called upon him to re-interpret this 1961 Times recipe for Chinese barbecued spareribs. He kept the simple soy-garlic-ketchup (yes, ketchup) marinade intact and applied it to salmon. He then served it with a preserved ginger relish and a cucumber salad seasoned with shichimi togarashi, a fiery Japanese spice blend (red pepper flakes make a fine substitute). If you don't have the time to make the relish and cucumber salad, serve the salmon with a few slivers of preserved ginger from a jar, a pile of white rice and some sautéed greens. That's better than your standard grilled salmon by a mile.

Time 3h30m

Yield 4 servings

Number Of Ingredients 15

1/4 cup fish sauce
1 1/2 teaspoons rice-wine vinegar
3/4 teaspoon sugar, or to taste
1/4 cup peeled and finely grated (or minced) ginger
1/4 cup honey
1/4 cup soy sauce
1 clove garlic, crushed
1 1/2 tablespoons ketchup
4 6-ounce pieces salmon fillet
1 cup rice-wine vinegar
1/4 cup sugar
1 tablespoon kosher salt
1/2 teaspoon togarashi (or ground red pepper flakes)
1 1/2 teaspoons grated ginger
1 English cucumber, seeded and sliced 1/8,-inch thick

Steps:

  • Make the preserved ginger: The day before, whisk together the fish sauce, rice-wine vinegar and sugar, then add the ginger. Make sure it is covered by the liquid.
  • Combine the honey, soy sauce, garlic, ketchup and 1/4 cup water. Marinate the salmon in this for 2 hours, turning after 1 hour.
  • Meanwhile, prepare the cucumber salad: Bring the vinegar to a boil. Add the sugar, salt, togarashi and ginger. Return to a boil, then let cool to room temperature. Put the cucumbers in a nonreactive container and cover with the vinegar mixture. Let sit at least one hour before serving.
  • Preheat grill to low. Arrange salmon on a hinged grill basket, then cook, basting occasionally with the marinade, over a low flame for 5 minutes per side, or until just flaky. (Or broil, skin side down, 6 inches from the flame for 4 minutes, baste, then turn and broil for 2 minutes.) To serve, use a slotted spoon to place the cucumber salad on each of 4 plates. Lay the salmon next to the salad and serve topped with preserved ginger.

1 cup jasmine or basmati rice
Coarse salt
5 scallions, one whole and 4 finely chopped
1/4 cup chopped fresh parsley leaves
1/4 teaspoon peppercorns
1/2 pound fresh wild salmon
1/4 cup pine nuts, lightly toasted
1/4 cup golden raisins
1 tablespoon freshly grated lime zest
2 tablespoons fresh lime juice
3 tablespoons extra-virgin olive oil
Freshly ground black pepper
1/2 cup fresh mint leaves, cut in fine strips

Steps:

  • Meanwhile, in a shallow saute pan, place 1 cup water, the whole scallion, parsley, and peppercorns and bring to a simmer. Sprinkle the fish with salt and place in the pan. Cover and poach for 5 to 9 minutes, until just cooked through. Remove the salmon and peel off and discard the skin while still hot. Chill the salmon.
  • Place the pine nuts, raisins, chopped scallions, lime zest and juice, and olive oil in a large bowl, season with salt and freshly ground black pepper, and toss to combine. Flake the salmon into the bowl and add the rice. Stir to combine. Let sit for a short while to allow the flavors to blend. Garnish with mint.

GREEN BEAN SALAD WITH HOT MUSTARD DRESSING

Green Bean Salad With Hot Mustard Dressing image

Hot mustard powder brings a sharp, spicy twist to traditional mustard vinaigrette, which complements sweet green beans well. The beans are blanched until crisp-tender, then tossed in the vinaigrette while still hot. As the beans cool, they absorb all the flavors of mild shallot, fragrant garlic, tangy rice vinegar and hot mustard. Rich, roasted pecans add nutty sweetness to balance the spicy dressing. Though the salad can be made a few hours ahead, you'll want to top it with the nuts right before serving to preserve their crunch. The beans themselves can be served at room temperature or chilled.

Time 20m

Yield 8 to 10 servings

Number Of Ingredients 11

Kosher salt and black pepper
2 tablespoons Asian hot mustard powder (or Colman's dry mustard powder)
1/4 cup neutral oil, such as safflower or canola
1/4 cup minced shallot
2 tablespoons unseasoned rice vinegar
1 tablespoon minced peeled ginger
1 1/2 teaspoons granulated sugar
1 teaspoon minced garlic
1/4 cup thinly sliced scallions (from 2 scallions)
2 pounds green beans, trimmed
1/4 cup chopped roasted pecans

Steps:

  • Bring a large pot of salted water to a boil.
  • In a large bowl, combine mustard powder and 2 tablespoons of very hot water; mix well. Let stand for 5 minutes to bloom. Add oil, shallot, rice vinegar, ginger, sugar and garlic, and season with salt and pepper. Whisk until smooth, then stir in scallions.
  • Once the water is boiling, add the green beans and blanch them until crisp-tender, about 2 minutes. Drain and transfer to the large bowl. Season with salt and pepper, and toss until evenly coated in the dressing. Let cool, stirring occasionally, about 10 minutes.
  • Transfer beans to a serving bowl or platter. Serve at room temperature or chilled, and top with the pecans.

Tips:

  • When selecting salmon, opt for wild-caught over farmed for optimal flavor and nutritional value.
  • For a crispier salmon, pat dry thoroughly before pan-searing. The excess moisture can hinder the searing process and result in a soggy texture.
  • If you prefer a more well-done salmon, cook for an additional 2-3 minutes per side. Use a fork to gently flake the salmon to check for doneness.
  • To create a flavorful marinade, combine soy sauce, brown sugar, lemon juice, garlic, and ginger. This not only enhances the taste of the salmon but also tenderizes it.
  • For the rice, use a high-quality sushi rice for the best texture and flavor. Rinse the rice thoroughly before cooking to remove excess starch and prevent clumping.
  • When preparing the cucumber salad, use a mandoline or sharp knife to thinly slice the cucumbers for a uniform texture and presentation.
  • To elevate the flavors of the salad, use fresh herbs such as cilantro, mint, or basil. These herbs add a layer of aromatic freshness and balance the other ingredients.

Conclusion:

This Tangy Sweet Salmon and Rice Salad offers a delightful fusion of flavors and textures. The perfectly seared salmon, tender rice, and refreshing cucumber salad come together to create a satisfying and wholesome meal. The combination of sweet and tangy elements, along with the aromatic herbs, creates a tantalizing dish that will impress your taste buds. Whether you're hosting a dinner party or simply looking for a delicious and healthy meal, this recipe is sure to be a hit.
