TOPPING:
1 cup flour
1 1/2 teaspoon baking powder
1/2 teaspoon salt
2 tablespoons sugar
3 tablespoons margarine
1/2 cup milk
FILLING:
4 cup sour cherries, pitted
2 tablespoons cornstarch
3/4 to 1 cup cherry juice
1 cup sugar
2 tablespoons fresh lemon juice
1 teaspoon ground cinnamon
1/2 teaspoon almond extract (optional)

Steps:

  • TOPPING : In a large bowl, combine flour, baking power, sugar and salt. Cut in shortening until mixture resembles coarse crumbs. Stir in milk. FILLING: Mix sugar, cornstarch, and cherry juice. Cook until slightly thickened. Remove from heat and add cherries, lemon juice, cinnamon and almond extract. To assemble cobbler, pour hot filling into a baking dish. Immediately spoon biscuit topping on top of hot filling. Bake for 20 to 25 minutes at 375°F or until filling is bubbly and topping is golden. Serve warm.

Tips:

  • Use fresh or frozen tart cherries: Fresh cherries are best when they are in season, but frozen cherries can be used year-round.
  • Pit the cherries before using: You can use a cherry pitter or a knife to pit the cherries.
  • Add sugar to the cherries: The amount of sugar you add will depend on your taste preferences. You can also use honey or maple syrup instead of sugar.
  • Use a variety of spices: Common spices used in tart cherry cobbler include cinnamon, nutmeg, and allspice. You can also add a pinch of salt to enhance the flavor of the cherries.
  • Use a biscuit mix or a pie crust mix: If you are short on time, you can use a biscuit mix or a pie crust mix to make the cobbler topping. However, if you have the time, making your own biscuit or pie crust from scratch will give you the best results.
  • Bake the cobbler until the topping is golden brown and the filling is bubbling: The baking time will vary depending on the type of topping you use. If you are using a biscuit topping, bake the cobbler for 20-25 minutes. If you are using a pie crust topping, bake the cobbler for 30-35 minutes.
