1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 green bell pepper, sliced
1 yellow onion, sliced
2 lb boneless, skinless chicken breast, cut in half
2 tablespoons taco seasoning
4 cloves garlic, diced
1 lime
10 oz canned diced tomatoes with green chiles, drained
flour tortilla
cheese, optional
sour cream, optional
guacamole, optional

Steps:

  • Add half of the sliced peppers and onions to your slow cooker.

  • Add the remaining peppers and onions, cover and any remaining lime juice.
  • Cook on high for 3-4 hours.
  • Remove chicken and cut/shred into slices (chicken left longer will tend to shred more - cook to your preference).

  • NOTE: If you find that there is too much liquid, you can remove till there is a desired amount before serving.

  • Enjoy!

Tips:

  • Choose the right chicken: For the best fajitas, use boneless, skinless chicken breasts or thighs. These cuts are tender and flavorful, and they cook quickly.
  • Slice the chicken thinly: This will help the chicken cook evenly and quickly.
  • Marinate the chicken: Marinating the chicken in a mixture of olive oil, lime juice, garlic, and spices will add flavor and tenderness. You can also use a store-bought fajita seasoning mix.
  • Cook the chicken over high heat: This will help to sear the chicken and lock in the juices.
  • Don't overcrowd the pan: If you overcrowd the pan, the chicken will not cook evenly.
  • Cook the chicken until it is cooked through: You can check this by inserting a meat thermometer into the thickest part of the chicken. The chicken is cooked through when it reaches an internal temperature of 165 degrees Fahrenheit.
  • Serve the chicken fajitas immediately: Fajitas are best served hot off the grill or stovetop. You can serve them with a variety of toppings, such as grilled vegetables, salsa, guacamole, and sour cream.

Conclusion:

Chicken fajitas are a delicious and versatile dish that can be enjoyed by people of all ages. They are perfect for a quick and easy weeknight meal, or for a special occasion. With a little planning and preparation, you can easily make chicken fajitas at home that are just as good as the ones you get at your favorite restaurant.
