Steps:
- Remove zest from a quarter of 1 orange, cut zest into very thin strips, and set aside.
- Cut away peel and pith of oranges and separate segments, removing white membranes. Cut segments into 1/2-inch pieces, and place in a small bowl. Coarsely chop olives, and add to oranges. Add shallot, olive oil, orange juice, vinegar, salt, and pepper; toss to combine.
- Cut bread into 4 wedges. Split 1 wedge crosswise with your hands (set remaining bread aside for another use), separating the top and bottom crusts. Tear each half into 4 chunks, and arrange on a serving plate. Place a slice of ham, folding or rolling it if necessary, on each piece of bread, and spoon about 1 tablespoon of the orange mixture on top. Sprinkle with zest, and serve.

Steps:
- In a food processor, combine black olives (such as Kalamata), parsley leaves, rinsed capers, and anchovy fillets with lemon zest and juice; process until finely chopped.
- With the motor running, add olive oil; process until a paste forms.
Tips:
- Use high-quality ingredients: The quality of your ingredients will greatly affect the taste of your ham olive spread. Use fresh, flavorful ham and olives, and a good quality cream cheese.
- Don't overmix: Overmixing can make your spread too runny. Mix the ingredients just until they are combined.
- Chill before serving: Chilling the spread allows the flavors to meld and makes it easier to spread.
- Garnish with fresh herbs: A sprinkle of fresh herbs, such as parsley, chives, or dill, adds a pop of color and flavor to your spread.
- Serve with crackers, bread, or vegetables: Ham olive spread is a versatile appetizer or snack. Serve it with crackers, bread, or vegetables for dipping.
Conclusion:
Ham olive spread is an easy and delicious appetizer or snack that is loved by people of all ages. It's a great way to use up leftover ham, and it's also a perfect make-ahead dish. Simply refrigerate the spread for up to a week, or freeze it for up to three months. When you're ready to serve, thaw the spread in the refrigerator overnight or at room temperature for a few hours. Enjoy!
