1 cup soy sauce, plus 2 tbsp, divided
¼ cup granulated sugar
3 tablespoons garlic, chopped
¼ cup scallions, chopped
2 lb boneless, skin-on pork shoulder
1 bunch asparagus, halved
6 yukon potatoes, diced
2 tablespoons olive oil
kosher salt, to taste
freshly ground black pepper, to taste
1 cup dark brown sugar
½ cup honey

Steps:

  • In a large bowl, combine 1 cup (240 ml) of the soy sauce with the sugar, garlic, and scallions, stirring until mixed.
  • Score the skin of the pork by slicing a crosshatch pattern through the skin down to the meat. This will help excess fat render out and allow more of the marinade to soak in.
  • Place the pork in the marinade and toss to coat evenly. Marinate for one hour.
  • Preheat the oven to 275ºF (140°C).
  • On a baking sheet, place the asparagus halves to the right and diced potatoes to the left. Toss the vegetables with the oil, salt, and pepper. Place the marinated pork in the middle of the baking sheet.
  • Bake 1 to 1 ½ hours, depending on the weight of the pork.
  • Raise the heat of the oven to 500ºF (260ºC).
  • In a small bowl, combine the brown sugar, honey, and remaining soy sauce, stirring until smooth.
  • Spoon the honey glaze over the top of the pork, making sure to fill the cracks and crevices on top.

2 onions, chopped
2 garlic cloves, crushed
6 large carrots, halved
4 large potatoes, halved
1/2 teaspoon salt
1/2 teaspoon pepper
2 tbslp dry onion soup mix
1 cup beef broth
1 teaspoon parsley
1/2 teaspoon thyme

Steps:

  • Brown roast on all sides.
  • Place in slow cooker.
  • In same skillet brown onions, garlic.
  • Add to the roast with all the ingredients.
  • Cook on Low 8 hours.
  • Remove pork roast and vegetables to a serving platter.
  • You can whisk the juice to smooth it out.

I looked and didn't find any pork roast made this way. This is the way I have made a Pork Butt Roast our entire marriage of 48 years. It is easy and oh so tender, juicy and delicious. I always serve it with mashed potatoes and make gravy from the rich drippings. If you make a large roast the leftovers can be made into many other dishes...even BBQ pork sandwhiches if you simmer some of it in BBQ sauce until it is absorbed.

3 -4 lbs pork butt
2 tablespoons instant minced onion
3 bay leaves
1 teaspoon salt
1 teaspoon black pepper

2 medium onions, chopped
2 medium carrots, chopped
1 celery rib, chopped
4 tablespoons all-purpose flour, divided
1 bay leaf, finely crushed
1/2 teaspoon dried thyme
1-1/4 teaspoons salt, divided
1-1/4 teaspoons pepper, divided
1 boneless pork loin roast (3 to 4 pounds)
1/3 cup packed brown sugar

Steps:

  • Preheat oven to 325°. Place vegetables on bottom of a shallow roasting pan. Mix 2 tablespoons flour, bay leaf, thyme, and 1 teaspoon each salt and pepper; rub over roast. Place roast on top of vegetables, fat side up. Add 2 cups water to pan., Roast, uncovered, 1-1/2 hours. Sprinkle brown sugar over roast. Roast 15-20 minutes longer or until a thermometer reads 140°. (Temperature of roast will continue to rise another 5-10° upon standing.), Remove roast to a platter. Tent with foil; let stand 15 minutes before slicing., Strain drippings from roasting pan into a measuring cup; skim fat. Add enough water to the drippings to measure 1-1/2 cups., In a small saucepan over medium heat, whisk remaining flour and 1/3 cup water until smooth. Gradually whisk in drippings mixture and remaining salt and pepper. Bring to a boil over medium-high heat, stirring constantly; cook and stir 2 minutes or until thickened. Serve roast with gravy. Freeze option: Freeze cooled sliced pork and gravy in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a covered saucepan, gently stirring and adding a little broth or water if necessary.

1 pork loin, 3 pound (1.3 kilograms)
2 tablespoons olive oil, divided
1 tablespoon kosher salt
3 tablespoons McCormick® Hearty Spice Blend, divided
3 cups brussels sprouts, (about 12 ounces) ends trimmed and halved lengthwise
3 cups butternut squash, (about 12 ounces-360 grams), cut into ½-inch (1.24 cm) pieces
1 large red onion, cut into 1 in (2.54 cm) pieces

Steps:

  • Preheat the oven to 425°F (220°C).
  • Using a sharp knife, score the fat cap of the pork loin in a crosshatch pattern. Do not cut through to the meat.
  • Using your hands, rub 2 tablespoon olive oil all over the pork. Liberally season all over with 1 tablespoon salt, plus more as needed. Rub 2 tablespoons of the McCormick® Savoury Spice Blend all over the pork.
  • Transfer the pork to a 9 x 13-inch (22 x 33 cm) baking sheet. Roast for 10 minutes, until the fat is beginning to render and brown.
  • Meanwhile in a large bowl add the Brussels sprouts, butternut squash, and red onion, 2 tablespoons olive oil, and 1 tablespoon McCormick® Savoury Spice Blend and toss to coat.
  • Remove the pork from the oven. Reduce the oven temperature to 375°F (190°C).
  • Evenly spread the vegetables on the baking sheet, turning the Brussels sprouts cut-side down. Clear a space in the center of the pan, then return the pork to the pan. It is okay if some of the vegetables are underneath the pork.
  • Return to the oven and cook for 35-50 minutes, depending on the size of the pork loin, until the internal temperature reaches 165°F (75°C).
  • Remove from the oven and let rest for 10-15 minutes before carving the pork and serving with the vegetables.
