1 package (1-1/4 pounds) uncooked bratwurst links
2 bottles (12 ounces each) beer or nonalcoholic beer
2 tablespoons butter
1 can (16 ounces) sauerkraut, rinsed, drained and chopped
1 can (10-3/4 ounces) condensed cheddar cheese soup, undiluted
1/2 cup whole milk
1 package (32 ounces) frozen Tater Tots
1 cup shredded cheddar cheese

Steps:

  • In a large saucepan, combine bratwurst and beer. Bring to a boil. Reduce heat. Cover and simmer for 10-15 minutes or until a thermometer reads 160° Drain and cut into 1/4-in. slices. In a large skillet, brown brats in butter over medium-high heat; drain on paper towels. , Spoon sauerkraut into a greased 13x9-in. baking dish. Top with brats. Combine soup and milk; drizzle over brats. Top with Tater Tots. Bake at 450° for 20-25 minutes or until potatoes are lightly browned., Sprinkle with cheese; bake 5 minutes longer or until cheese is melted.

This is one of my favorite casseroles made by my friend June. It's an adaptation of a recipe she got from a German friend. So, this is a German inspired - American adapted recipe! This recipe is easy to double to make for a large group.

1 (14 ounce) package sauerkraut (the kind you would get in the refrigerator section. Don't drain!)
32 ounces tater tots
1 (10 1/2 ounce) can cream of mushroom soup
1 tablespoon mayonnaise
1/4 teaspoon cayenne pepper

Steps:

  • Preheat the oven to 350 degrees Fahrenheit.
  • Gently mix all ingredients together in a big bowl (including the sauerkraut juice in the package).
  • Use a nonstick spray on a 9x6 baking dish. Poor the mixture into the baking dish and bake for 45-60 minutes - until it turns a little brownish on top.

One 16-ounce bag frozen Tater Tots®
Butter, for the baking dish
1 tablespoon olive oil
1 pound spicy bulk breakfast sausage
1 medium onion, very finely diced
1 cup milk
1/2 cup half-and-half
1/4 teaspoon seasoned salt
1/4 teaspoon cayenne
4 large eggs
1 red bell pepper, very finely diced
1 green bell pepper, very finely diced
2 cups grated Cheddar cheese
1 cup grated pepper jack cheese
Kosher salt and freshly ground black pepper

Steps:

  • Line up the tater tots in a buttered 9-by-13-inch baking dish.
  • Add the olive oil to a large skillet over medium heat. Add the sausage and onion and cook, breaking the sausage up with a wooden spoon, until browned and cooked through, 8 to 10 minutes. Set aside to cool slightly, then sprinkle it over the tater tots.
  • In a large bowl, mix the milk, half-and-half, seasoned salt, cayenne, eggs, bell peppers, half of both cheeses and some salt and pepper. Pour over the tots and sausage mixture, then top with the rest of the cheese. Cover with foil and refrigerate overnight.
  • Preheat the oven to 350 degrees F.
  • Bake, covered, for about 25 minutes. Remove the foil and continue to bake until the cheese is brown and bubbly and the casserole is cooked through, another 20 to 35 minutes. Cut into squares and serve.

I got this recipe from my sister -in-law. She makes her own sauerkraut which of course is 100 times better than the can stuff. This is a great potluck recipe.

1 (32 ounce) jar sauerkraut, do not drain
1 lb hamburger
1 (10 1/2 ounce) can cream of mushroom soup
1 (10 1/2 ounce) can water
tater tots, no special amount

Steps:

  • Brown the hamburger. Drain the fat.
  • Mix cream of mushroom soup and water together. Add this to pan with hamburger and mix well.
  • Put kraut in a large casserole dish. Pour hamburger mixture over kraut and mix well. Place tater tots on top.
  • Bake at 350 for 45 minute or until the tater tots are nice and brown.
  • Mixture will be runny the first day but thickens up each time you reheat it.

1 pinch celery salt
1 tablespoon brown sugar
1 (15 ounce) can baked beans

  • Preheat the oven to 350 degrees F (175 degrees C). Cook bratwurst in a skillet over medium-high heat just until nicely browned on the outside.
