HOTDISH (TATER TOT CASSEROLE)

Hotdish (Tater Tot Casserole) image

Hotdish is an easy, one-dish dinner often served in Minnesota at such large gatherings as family reunions, potlucks or church suppers. Don't be turned off by its humble appearance; the combination of cream of mushroom soup, corn, green beans, beef and a delightful crispy potato topping (the more taters, the better!) is universally likeable.

Categories     main-dish

Time 1h35m

Yield 8 servings

Number Of Ingredients 8

1/4 cup extra-virgin olive oil
1 medium yellow onion, finely chopped (about 2 cups)
1 pound 80-percent lean ground beef
Kosher salt and freshly ground black pepper
2 cups frozen cut green beans, thawed (8 ounces)
1 3/4 cups frozen corn kernels, thawed (8 ounces)
Two 10-ounce cans condensed cream of mushroom soup
1 pound frozen potato tots

Steps:

  • Preheat the oven to 350 degrees F.
  • Add the oil to a large skillet over medium heat. Add the onions and cook until soft and beginning to brown, about 15 minutes. Add the beef to the onions and cook until the meat is brown, stirring and scraping the bottom of the skillet to release the yummy brown bits, about 10 minutes. Season with salt and pepper.
  • Transfer the beef and onion mixture from the skillet into a 9-by-13-inch baking dish. Scatter the green beans and corn evenly on top. Spread the cream of mushroom soup over top and top with frozen potato tots. Bake uncovered for 1 hour; the potato tots should be golden brown. Serve.

CHICKEN POT TOT HOTDISH

Chicken Pot Tot Hotdish image

My Tater Tot hotdish has the body of a chicken pot pie, a dish that I loved growing up, long before I knew the existence of Tater Tot hotdish. But a close examination reveals that the only real differences are the subbing of chicken for ground beef and the use of a homemade cream of chicken soup instead of mushroom soup. I don't think this will offend a hotdish purist.

Yield Serves 6-8

Number Of Ingredients 13

3 tablespoons unsalted butter
1 large onion, finely chopped
3 carrots, cut into 1/2-inch pieces
Kosher salt
6 tablespoons flour
3 cups whole milk
Enough chicken broth base to make 3 cups broth
3/4 cup peas, fresh or frozen
1 1/2 pounds boneless, skinless chicken thigh, cut into 1/2- to 3/4-inch pieces
1/2 teaspoon dried thyme
Black pepper
18 ounces frozen Tater Tots
Ketchup, for serving (optional)

Steps:

  • Preheat the oven to 400ºF.
  • In a large skillet, melt the butter over medium-high heat. Add the onion and carrots and a pinch of salt and cook, stirring until soft, about 10 minutes. Stir in the flour so that it gets evenly distributed. Add 1 1/2 cups of the milk, stirring constantly until thickened. Repeat with the remaining 1 1/2 cups milk. Stir in the chicken broth base, peas, chicken, thyme, and a few turns of pepper and simmer, stirring often, until the chicken is cooked through and no longer pink, 10 to 15 minutes. Taste the mixture and adjust seasonings if desired.
  • Transfer the mixture to an 11x8-inch baking dish (or other 3-quart ovenproof dish) and cover the bitch with Tater Tots. Arrange them snugly and neatly. Bake until the tots are golden brown. Begin checking for doneness at 30 minutes. Let cool slightly and serve with ketchup, if desired.

TATER TOT HOTDISH

Tater Tot Hotdish image

I'm originally from Minnesota, and if Minnesota is famous for one thing, it's hotdish. You might know it better as casserole, or something like that, but in Minnesota, it's hotdish. This is my mom's recipe, the same one that she used to make for me when I was little.

Provided by Buffington

Categories     One Dish Meal

Time 1h10m

Yield 4-6 , 4-6 serving(s)

Number Of Ingredients 4

1 lb ground beef
1 (1 lb) package tater tots (you probably won't use the whole package, but this is usually the smallest size I can find)
2 (10 ounce) cans condensed cream of mushroom soup (or 3 cans if you want it extra creamy)
1 (14 ounce) can vegetables (or 2 cans, whatever kind you like, I like sweet corn, my mom uses green beans)

Steps:

  • Preheat oven to 350 degrees.
  • While the oven is preheating, brown the ground beef (seasoning to taste as you cook) and drain off the grease.
  • Spread the beef in the bottom of a 2 to 2 1/2 quart baking dish.
  • Drain the liquid off the vegetables and spread them over the meat.
  • Using a rubber spatula, spread the cans of soup over the top of the vegetables and meat. Use the soup as is, straight from the can. Do NOT mix it with anything.
  • Arrange a layer of tater tots over the top of that.
  • Bake, uncovered, at 350 degrees for 50 minutes.
  • Top with your favorite variety of shredded cheese as you serve.
