- Marinade:.
- Stir together ingredients for marinade.
- Add shrimp. Set aside to marinade 1/2 hour.
- Dressing:.
- Whip to a smooth consistency the dressing ingredients; mayonnaise, broth, soy sauce, lemon juice, chipotle. Refrigerate for 30 minutes.
- Grill Shrimp:.
- Remove shrimp from marinade and grill over medium-hot setting for a couple of minutes on each sitde. The goals is for the shrimp to taste grilled! When shrimp is done, remove and set aside to cool.
- Assemble Salad:.
- In a large salad bowl, mix romaine, corn and tomatoes with dressing.
- Place on a chilled salad plates.
- Place shrimp on lettuce bed.
- Garnish with Parmesan Cheese, croutons and cilantro.
- Serve additional dressing on the side.
- Serve immediately.

- 1. In a small bowl, mix together the tequila, lime juice, olive oil, margarita mix, honey, salt and pepper. Set aside.
- 2. Skewer the shrimp; about 4-5 on each skewer. Place skewers in a dish long enough for them to lay flat.
- 3. Pour the marinade over the shrimp, cover and place in refrigerator for 1-4 hours.
- 4. Heat grill to a medium-low heat. Place the shrimp skewers on the grill and cook for about 2-3 minutes on each side. Remove and serve.
- 5. These go great with your own coleslaw recipe or a nice rice medley.

I ALWAYS make the Lime Cilantro Rice and Avocado Salad posted by me with this dish. The combination is a truly amazing meal. That is guaranteed to impress! Hint: DO NOT make this marinade ahead (like the day before) the zest will cause it to get very bitter tasting! Also it says to cook mixture 7-8 minutes until gets thick and syrupy.
