Time 35m

Yield 6

Number Of Ingredients 10

cooking spray
1 ½ cups self-rising flour, plus more for kneading
1 cup whole-milk plain Greek yogurt
2 teaspoons olive oil
½ medium red onion, thinly sliced
1 tablespoon olive oil
3 fluid ounces thick teriyaki sauce
1 cup cooked and shredded chicken breast meat
¾ cup shredded mozzarella cheese
2 teaspoons chopped fresh cilantro

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Lightly spray a baking sheet with cooking spray and set aside.
  • Mix flour and yogurt in a bowl; dough will be crumbly. Transfer dough to a lightly-floured work surface. Knead dough until smooth, 5 to 7 minutes, adding more flour if too sticky. Cut dough in half and form into balls.
  • Flatten each dough ball with the palm of your hand, stretching and pulling until it is 1/4 inch thick (very thin). You also can roll out the dough with a rolling pin if that's easier for you. Shape the dough into two long ovals.
  • Transfer the dough to the prepared baking sheet, prick using the tines of a fork, and brush with 1 tablespoon olive oil.
  • Bake in the preheated oven for 3 minutes. Remove and leave the oven on.
  • Meanwhile, heat 2 teaspoons olive oil in a medium skillet over medium heat; add onion slices, and cook for 3 minutes.
  • Spread the crusts with the teriyaki sauce leaving a 1/2-inch border all around the edges. Top with the chicken, onions, and mozzarella cheese.
  • Return to the oven and bake until the crusts and toppings are browned to your liking, 9 to 11 minutes.
  • Remove from the oven and garnish with cilantro. Slice and serve immediately.

Tips:

  • Mise en place: Before you start cooking, make sure you have all of your ingredients and equipment ready to go. This will help you stay organized and avoid any scrambling during the cooking process.
  • Use fresh ingredients: The fresher your ingredients, the better your teriyaki chicken and soba noodles will taste. Look for vegetables that are crisp and brightly colored, and meat that is free of any discoloration or odor.
  • Marinate the chicken: Marinating the chicken in the teriyaki sauce for at least 30 minutes will help to infuse it with flavor. If you don't have time to marinate the chicken, you can still make this recipe, but the chicken will not be as flavorful.
  • Cook the chicken over medium heat: Cooking the chicken over medium heat will help to prevent it from burning or becoming dry. Be patient and let the chicken cook through completely before flipping it.
  • Use a large skillet: A large skillet will help to ensure that the chicken and vegetables have plenty of room to cook. If you don't have a large skillet, you can cook the chicken and vegetables in batches.
  • Serve the teriyaki chicken and soba noodles immediately: This dish is best served immediately after it is cooked. The noodles will start to absorb the sauce and become soggy if they sit for too long.

Conclusion:

Teriyaki chicken with soba noodles is a delicious and easy-to-make dish that is perfect for a weeknight meal. The combination of sweet and savory flavors is sure to please everyone at the table. With a little planning and preparation, you can have this dish on the table in under 30 minutes. So next time you're looking for a quick and easy meal, give this recipe a try.
