2 tablespoons canola and olive oil blend
2 cups diced fresh tomatoes
1 onion, minced fine
3 cloves minced garlic
4 teaspoons chili powder
2 teaspoons paprika
2 teaspoons ground cumin
1 1 1/2 cups boneless, skinless chicken breast cubed or leftover turkey, boneless cooked rotisserie chicken or another meat you prefer
salt, pepper, and cayenne to taste
1 15-ounce can pinto beans, drained and rinsed
1 15-ounce can kidney beans, drained and rinsed
1 16-ounce jar salsa verde
12 small flour tortilla, corn tortilla or use 8 large flour tortilla
2 cups cooked rice
1- 11-ounce canned corn drained
16 ounces of shredded Mexican blended cheese and more for the top if needed
1 1/2 cups red enchilada sauce

Steps:

  • In a large frypan, add the oil add garlic, onions and saute till it's fragrant but not browned.
  • Add chicken cubes, until the juices run clear around 5 to 7 minutes.
  • Add 1/2 teaspoon salt, all seasonings, tomatoes, and water until the sauce thickens around 6 to 8 minutes.
  • Stir in beans (you can also use black beans or any kinds you prefer) and set aside.
