1 lb ground chuck or 1 lb lean ground beef
1 cup crushed corn tortilla chips (baked or fried)
1/2 cup chopped onion
1 egg whites or 1 whole egg
2 tablespoons chopped fresh cilantro
1 teaspoon Worcestershire sauce
1 teaspoon garlic salt
1 teaspoon paprika
1/2 teaspoon cumin
1/2 teaspoon chili powder
4 whole wheat hamburger buns or 4 bakery buns
jalopeno mayonnaise
1 tablespoon minced pickled jalapeno
1 tablespoon chopped cilantro
1 teaspoon minced garlic
1/2 cup light mayonnaise
shredded cheddar cheese
one large avocado, sliced
shredded lettuce
salt
pepper

Steps:

  • Combine the first 10 ingredients in a medium bowl. Mix with hands until combined. Shape beef mixture into four round patties. Cook over medium heat on grill for 5 minutes per side or for longer if desired.
  • For the Jalopeno Mayo.
  • Combine the pickled jalopeno, cilantro, minced garlic in a small bowl. Cover and chill to ready to use.

1/2 cup bread crumbs
1 egg

4-6 slices of cheese
4-6 fresh (hamburger buns)

1 large red onion (peeled and finely chopped)
1/2 cup fresh parsley (finely chopped)

Steps:

  • Combine all the ingredients in a large bowl and mix well. Heat a large frying pan and add some oil.
  • Fry a small amount of the burger mixture to check the seasoning. Adjust if necessary.
  • Form the mince mixture into burgers and fry for +- 4 minutes per side until browned and cooked through. When you've flipped the burger the first time, place a slice of cheese on the patty and allow to melt while the patty is cooking.
  • Serve on a fresh bread roll with home-made salsa and guacamole.
  • Remove the avocado flesh from the skin and mash with the lemon juice, salt & pepper.
  • Set aside until you're ready to use it.

6 ounces Oaxacan cheese, separated into thin strings (can substitute mozzarella)
4 sesame seed buns, split
Corn tortilla chips
4 very thin slices red onion
5 papalo leaves, finely minced (can substitute 1/4 cup cilantro sprigs, plus 2 tablespoons watercress leaves)

Steps:

  • In a small mixing bowl combine the chipotle, adobo sauce, garlic, Mexican crema, and mayonnaise. Mix until well combined and set aside.
  • Avocado Spread:
  • In a small mixing bowl combine the avocado and lime juice. Season, to taste, with salt and set aside.
  • Combine the beef, adobo sauce, salt, and pepper in a large bowl. Mix well, handling the meat as little as possible to avoid compacting. Divide the mixture into 4 equal portions and form into patties to fit the size of the buns.
  • Heat a large skillet over high heat. When oil is hot, add burgers. Cook for 3 minutes, then flip burgers. Top the burgers with Oaxacan cheese and cover with aluminum foil. Cook until the burgers are cooked medium-rare, about 3 to 4 minutes. Toast the buns.
  • To assemble the burgers, spread some Chipotle Crema on the cut sides of the buns. On each bun bottom, add some corn tortilla chips, a cheese-topped patty, onion, equal amounts of Avocado Spread, and papalo. Cover with the bun tops and serve.

Vegetable oil, for the grill
4 soft kaiser rolls, split
1 avocado, halved, pitted and sliced
Juice of 1/2 lime
1 15-ounce can refried black beans, warmed
1/2 cup queso fresco cheese, crumbled
Pickled jalapeno slices, for topping
1 1/2 cups shredded iceberg lettuce

Steps:

  • Form the beef into four 6-ounce patties, about 3/4 inch thick; press the center of each patty with your thumb to make a 1/2-inch-deep indentation. Season the patties on both sides with salt and pepper. Lightly brush the grill grates with the vegetable oil, then grill the patties, indentation-side up, until marked on the bottom, about 5 minutes. Flip and cook until marked and slightly firm, about 3 more minutes for medium doneness. Remove the patties to a plate and let rest 5 minutes. Grill the rolls, cut-side down, until lightly toasted, about 1 minute. Toss the avocado and lime juice in a bowl and season with salt and pepper. Spread the refried beans on the bun bottoms, then top with the burger patties, cheese, avocado, pickled jalapenos and lettuce. Cover with the bun tops.

500 g lean ground beef
400 g kidney beans, rinsed, drained & roughly chopped
25 g approx sachet taco seasoning mix
1 onion, grated
1 egg, lightly beaten
1 cup breadcrumbs
1 tablespoon oil
150 g cheddar cheese, cut into thin slices
6 hamburger buns
lettuce leaf
1/2 cup sour cream
1/2 cup salsa
2 ripe avocados, mashed
1 garlic clove, crushed
1 small red onion, finely chopped
1 small ripe tomatoes, finely chopped
1 tablespoon lemon juice
1 dash Tabasco sauce

Steps:

  • Combine mince, beans, seasoning mix, onion, egg & breadcrumbs in a bowl.
  • Divide the mixture into 6 portions and shape into flat hamburger patties.
  • Heat the oil in a frypan & cook the patties over med heat for 3-4 mins each side or until cooked through.
  • Place a couple slices of cheese on top of each patty. and continue cooking until the cheese starts to melt.
  • Toast & lightly butter the hamburger buns. Top the bases with lettuce leaves, a hamburger patty, and a generous spoon of each the guacamole, salsa & sour cream & finish with the bun lid.
  • To make guacamole, combine all ingredients in abowl & mix well to combine.

1 medium onion, finely chopped
1 medium green bell pepper, finely chopped
2 cloves garlic, minced
1 cup salsa
1 (15.25 ounce) can whole kernel corn, drained
1 pound ground turkey
1 (1.25 ounce) package taco seasoning mix
⅓ cup dry bread crumbs
6 (10 inch) flour tortillas
6 tablespoons sour cream
2 cups shredded lettuce

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Coat a medium baking dish with cooking spray.
  • Heat the olive oil in a skillet over medium heat, and saute the onion, green pepper, and garlic 5 minutes. Remove from heat, and cool slightly.
  • In a small bowl, mix the salsa and 1/2 the corn. In a large bowl, mix the onion mixture with the turkey, taco seasoning, and 2 tablespoons of the salsa mixture. Divide into 6 patties, and press into the breadcrumbs to lightly coat on all sides. Arrange coated patties in the prepared baking dish.
  • Bake the patties 10 minutes in the preheated oven. Drain any liquid from the dish, turn patties, and spread with the remaining salsa mixture. Continue baking 10 minutes, to an internal temperature of 165 degrees F (75 degrees C).
  • Warm the tortillas in the microwave, about 30 seconds on High. Wrap the cooked turkey patties in the warmed tortillas with sour cream and lettuce. Sprinkle with remaining corn to serve.

1 lime, juiced
1-2 slices cheese
1 brioche bun, split
½ avocado
2 cherry tomatoes, chopped
