BAZLAMA - TURKISH FLAT BREAD

Bazlama - Turkish Flat Bread image

Bazlama is a simple and delicious village bread that I learned to prepare after moving to Turkey. Normally it is cooked in an outdoor oven but it works just as well on the stove top. It's best served warm.

Time 4h

Yield 4

Number Of Ingredients 6

1 (.25 ounce) package active dry yeast
1 tablespoon white sugar
1 tablespoon salt
1 ½ cups warm water (110 degrees F/45 degrees C)
½ cup Greek-style yogurt
4 cups all-purpose flour

Steps:

  • Dissolve the yeast, sugar, and salt in the warm water. Add the water and yogurt to the flour and mix well. The dough will be soft but not sticky. Turn the dough out onto a lightly floured surface and shape it into a ball. Cover the dough with a damp cloth and allow it to rise at room temperature for 3 hours.
  • Cut the dough into four portions. Shape the dough into rounds and flatten each round as though you're making pizza dough. Cover the rounds with a damp cloth and let the dough rest for 15 minutes.
  • Heat a cast iron skillet or griddle over medium-high heat. Place one dough round in the skillet and bake until brown spots appear on the bottom, about 1 minute. Flip the bread and bake for an additional minute. Remove the bread and wrap it in a clean kitchen towel to keep warm.
  • Repeat with the remaining dough rounds. Store any leftover flatbreads in an airtight container.

Pinched this recipe from the partners dad, he's made it for us each time we've been and it's so yummy. He sometimes puts herbs, garlic etc in for added flavour, unsure of measurements, so use your best judgement.

Time 3h2m

Yield 8 flat breads

Number Of Ingredients 6

1 tablespoon caster sugar
7 g sachet dried yeast or 15 g fresh yeast
4 cups plain flour
1 tablespoon table salt
1/2 cup Greek yogurt
vegetable oil, for brushing

Steps:

  • Combine sugar, yeast and 375ml warm water in a bowl and stand in a warm place for 10 minutes or until mixture begins to foam.
  • Combine flour and salt in a large bowl, then add yeast mixture, yoghurt and combine well. Turn dough out onto a lightly floured surface and knead for 5 minutes or until smooth. Place dough in a lightly oiled bowl, cover with cloth or tea towel and stand for 2 hours.

Tips:

  • Use the right flour: For a crispy flatbread, use a bread flour or all-purpose flour with a high protein content. This will help the dough develop a strong gluten network, which will result in a chewy texture.
  • Activate the yeast properly: If you're using active dry yeast, it's important to activate it before adding it to the dough. To do this, dissolve the yeast in warm water (105-115°F) with a little sugar. Let it sit for 5-10 minutes, or until the yeast begins to foam.
  • Knead the dough properly: Kneading the dough helps to develop the gluten network and make the dough more elastic. Knead the dough for at least 5-7 minutes, or until it is smooth and elastic.
  • Let the dough rise in a warm place: Once you've kneaded the dough, let it rise in a warm place for 1-2 hours, or until it has doubled in size. This will help the yeast to produce gas, which will make the flatbread light and airy.
  • Roll out the dough thinly: For a crispy flatbread, roll out the dough as thinly as possible. This will help it to cook evenly.
  • Cook the flatbread over high heat: Cook the flatbread over high heat in a well-oiled skillet or on a hot griddle. This will help to create a crispy crust.
  • Top the flatbread with your favorite toppings: Once the flatbread is cooked, top it with your favorite toppings. Some popular toppings include cheese, vegetables, meat, and sauce.

Conclusion:

Thai flatbread is a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. It's easy to make and can be customized to your liking. With a little practice, you'll be able to make perfect Thai flatbread every time.
